This wine showcases the strength of Margaret River for Chardonnay with a restrained, modern, elegantly structured wine from one of the great Margaret River vineyards.

Fermented and matured for 11 months in French oak barriques. In the glass aromas of nectarine and ripe pear are interwoven with dried honey, light citrusy nougat and spice notes rise.  Mid weighted and texturally rounded, the palate features nectarine and grapefruit flavours over a back drop of dried honey, citrus and lightly spiced nougat. Finishes nice and fresh with an elegant medium to long aftertaste.

Delightfully presented chardonnay from this lighter vintage. Nutty and creamy with a savoury palate character. It’s more in the spear and citrus melon zone, with a faint mineral acidity to sustain the finish.

Description

Former winemaker at Howard Park and Madfish, Michael struck out on his own when his dream vineyards in the key quality region of Wilyabrup came up for sale. With more than 30 years of winemaking under his belt, and 12 years going solo with Hay Shed Hill, this man is one of the most experienced, respected and revered winemakers in Australia – and rightly so. He is also a strong purveyor of classically blunt Aussie pearls of wisdom. “It`s all in the detail – you quite simply visit the vineyard every day. I`m not interested in being epic, I just want to make wine I like to drink”.

Everything under the Hay Shed Hill label is single-vineyard, which Michael explains. “I make single vineyard and single block wines because they express a particular character – otherwise what`s the point?” All of the vines are dry farmed and made from free run juice only. The vineyards are around 20 years old and they are all farmed organically, but without certification.

From the winery : Only free run juice from the old vine Gin Gin clone Chardonnay was used in the making of this wine, this component of the juice is the highest in quality with the most intense fruit expression and the lowest in undesirable phenolic skin characters. The clear juice was fermented in French oak barriques; 30% new with the balance being one, two and three years old. The wine was matured in the same barriques for a further 10 months. No lees stirring or malo lactic fermentation was allowed in order to preserve and highlight the purity of fruit expression. The objective was to make a wine that expressed the character of this superb vineyard in an elegant and restrained style of wine that would be bright, vibrant and fresh in its youth but benefit from medium term cellaring.
