    Crafted from hand-harvested fruit, it was barrel-fermented and aged in a mix of large oak vats and smaller barrels, and yet the oak, even at this young stage, is not dominant.  It has great concentration with excellent refreshing natural acidity which alludes to it being made from old vines.

    In the glass, it is a shimmery gold colour with aromas apple, white peach, citrus, wildflowers and light oak spice.  The palate is textured but crystalline, creamy and citrusy, flashy but classic—in short, everything you could ask for in a Burgundy Chardonnay!   Drink now to 2027.   Match with roast chicken or rich seafood like lobster, scallops or Turbot.

    In the glass, it has a deep ruby colour with a very fine, fruity bouquet of black cherry, redberries, blackberries, violet and black tea.  Supple with fine tannins in the mouth, lots of freshness keep it lively and tangy all the way through to the long, smoky finish.  This is a balanced wine with a style that is very representative of its grape variety and the Santenay region.

    Will develop in the bottle so it’s ideal to drink now through to 2029.   Match with roast, grilled or pan-fried meats and an array of cheese.

    The vineyard is situated in the heart of the AOC Bouzeron in the Côte Chalonnaise. The east-facing plot is planted with an Aligoté strain called ‘Golden’, the vines are low yielding and produce exceptionally aromatic grapes. The climate is continental, with warm summers and cold winters and excellent diurnal temperature differences. The vineyard is cultivated using organic preparations and the use of chemical herbicides is strictly prohibited. The double Guyot trained vines are carefully managed between the spring and summer months to ensure optimal conditions for healthy, mature grapes at harvest time; with strict de-budding, leaf thinning and ploughing of the soil. The vines are grown in marly-chalk soils from the Jurassic period.

    The Saint-Véran is sourced from the Perraud’s own vineyards in the Maçonnais and the commune of Prissé. The distinctive clay and chalk soils give extra power and richness to the otherwise elegant, aromatic palate. The white-chalk pebbles absorb sun during the day and reflect it during the night to extend ripening.   After a long ferment using wild yeasts in temperature-controlled stainless-steel tanks, the wine underwent malolactic fermentation. It then matured on its lees for a further six to eight months prior to bottling.

    A family of winemakers since the 19th century the Michel family vineyards are planted on the first slopes to be farmed by Cistercian monks during the 11th century.

    The 25 hectares encapsulate 3 Grand Crus and 7 Premier Crus as well as Chablis and Petit Chablis terroir. Guillaume Michel runs the domaine now, 80% of the vines are farmed organically, he is strictly sustainable in the vineyards with the highest level of HVE certification. Biodiversity is vital to their work with hedgerow populations of insects and a population of bees humming through the vineyards. In the winery, the wines are vinified only in stainless steel, using natural yeasts to preserve the expression of terroir in its purest form. Without the presence of oxygen in the early stages of their development these wines take longer to express themselves in bottle, but richly reward those who wait.

    This 2020 Petit Chablis comes from a very special vineyard overlooking the Valmur and Les Clos grand crus. It will reveal floral notes of hawthorn and grape blossom. The wine is particularly lively in the mouth, with sea breezes and a delicious chalky finish.

    In the glass, this 2018 Petit Chablis has a refreshing and clean feel with lemony notes on the crisp, mineral and dry palate, through to a mouthwatering finish. This is made in a fuller style with longer ageing on the lees to give weight.

    Maud and her family believe in the ethos of organic farming along with that of minimal intervention; all of their vineyards are farmed organically. The vineyard is situated on the left bank of the River Sereine, where the vines are planted with an easterly orientation at an average altitude of 210 metres. The double Guyot trained vines are between 25 to 30 years old and are grown in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. There is also the presence of Cailloux, large pebbles which help to promote ripening by absorbing the heat of the day and then radiating it at night. The vines are planted to a density of 5,700 vines per hectare and yields are kept to a maximum of 60 hectolitres per hectare. At Domaine Jean Goulley, they believe in highlighting terroir and produce their wines in an unoaked style, allowing them to reveal the purity, minerality and vitality of the soil.

    So what does it taste like!  Its a refined and pure Chablis with pronounced citrus aromas, a light mineral character and a characteristic saline note. The palate has great weight leading to a long finish with a delicious hint of almond. Classic Chablis.
