    The grapes were carefully sorted upon arrival at the winery and the three varieties were fermented separately in stainless steel vats at controlled temperatures of between 14 and 16°C. The wines were matured on their lees for two months, with periodic racking to add complexity. Carefully blended showcasing wonderful freshness, aromatics and pure fruit flavours.

They are protected from the moderating influence of the Pacific Ocean by the coastal mountains, but the influence of the Andes ensures warm days and cool nights. This provides ideal ripening conditions for the grapes, resulting in ripe tannins and attractive perfumes.

    The vineyard for this wine’s fruit is located in Molina in the Curicó Valley at an altitude of 243 metres. It is situated on the 35th Parallel South, between the Andes Mountains and the cool Pacific Ocean. The warm dry days and cold nights encourage a long growing season. Intense sunshine is tempered by cooling sea breezes, allowing the grapes to achieve outstanding fruit aromas and exceptional colour concentration. Working with a model of micro viticulture, each plot, of no more than half a hectare, is identified according to its terroir and microclimate and planted accordingly. Grapes are subjected to specific pruning, irrigation, canopy management and harvesting, which results in grapes of optimum quality and flavour.

    The  Pinot Grigio grapes are sourced from hillside vineyards in the Alpone valley, in the commune of Monteforte d’Alpone in eastern Soave. Here the vines are planted on granite and decomposed volcanic rock, producing steelier wines.  The hillside sites are slightly cooler so the grapes ripen later imparting more precise and elegant flavours in the wines.

    Grapes for the Tanguero wines come from the Barrancas region in southern Maipú, Mendoza. The vines here are planted on rocky, well-draining soils to the south of the Mendoza river, at 700 metres above sea level. The vineyards are located at high altitudes, meaning there is a high diurnal range. This extends the growing season and helps to retain freshness and finesse in the wines.

    The grapes are grown in high-altitude vineyards in the northernmost part of Central Castile, where the continental climate enjoys sunny days and cool nights. This diurnal temperature difference encourages grapes with intense fruit and excellent varietal definition, which retaining remarkable freshness. The vineyards are sustainably managed and organically farmed as part of an integrated ecosystem. Low annual rainfall results in low disease pressure, enabling the vines to be grown without the aid of fungicides. Fertilisers have never been used, only organic manure is applied and weed control is managed by a low, superficial tilling. Rainwater is collected in a small reservoir and is used for drip irrigation in the case of extreme drought.
