    An irresistible rosé Champagne combining great precision, freshness and fullness with charming aromas of wild strawberries, red and black currants, along with beautiful hints of vanilla and cinnamon spice.

    This rosé Champagne was produced using the solera method. Palmer & Co is one of the rare champagne houses to have adapted this well-known technique, often used for Spanish wines, for the creation of its champagnes. Each year, Palmer & Co adds red wines from the new harvest, which have been barrel-aged and typically amounts to 6-7%, to compensate for the wine drawn off. This perpetual reserve was started 40 years ago and is kept in stainless steel tanks. It forms an extraordinary library expressing a unique combination of red fruit and spice aromas and flavours. This rosé Champagne was then bottle-aged for two to three years on the lees, in the 18-metre- deep chalk cellars which imbues the wine with incredible complexity.

    The grapes for `Les Clos` are sourced from a 0.67 -hectare single vineyard, which was planted in 1964 on a south-western facing slope. The soils are Kimmeridgian clay and limestone. This wine is certified organic from the 2018 vintage, as such Domaine de L’Enclos use only organic fertilisers in the vineyard and all of the fruit is hand-harvested.

    The 1er Cru of Montmains is one of the best known Premier Cru vineyards and stretches along an exposed hillside to the southwest of the town of Chablis. It is angled slightly east toward the morning sun, the slopes of the vineyard have enough sunshine to ripen grapes, while still retaining the fresh acidity that is so important to Chablis wines. Montmains is known for producing fresh, elegant wines with good minerality.

This cuvée reached full maturity after a minimum of three years of bottle ageing in the historic, limestone cellars in Ay, which are centuries old.

    The grapes for this cuvée come from 20 Crus from the Grand and Premier Crus sites of the Champagne region. The Chardonnay comes predominantly from the Premier Cru of Vertus and contributes freshness and lemony notes, while the mineral dimension and flinty aromas, come from the Cru of Villers Marmery, which has a limestone soil. The Grands Crus and Premiers Crus villages of Chouilly, Avize, Oger and Vaudemange, complete the blend with strength and complexity. The Pinot Noir comes from the Grands Cru and Premiers Cru villages of Ay, Hautvillers, Avenay Val d’Or and Louvois; it produces light, tender and fruity wines, while the Pinot Meunier imparts a roundness and suppleness. A unique blend of terroirs, producing a unique Rosé Champagne.

    A rare magnum of Savigny Les Beaune ‘Dessus Les Gollardes’ from Pierre Guillemot.

    The vineyard was planted in 1957. It is 30% Chardonnay and 70% Pinot Gouges, a rare strain of albino Pinot Noir discovered by the great Henri Gouges. In the 1930’s some of his Pinot Noir vines mutated from red to white grapes. Monsieur Gouges propagated these cuttings and distributed some to various vigneron friends.

    Champagne Collet, established in 1921 as part of the oldest Champagne cooperative in the Grand Cru village of Aÿ, is proud to celebrate its 100-year anniversary. To celebrate its centenary, Champagne Collet has made a commemorative bottling called “Cuvée n°21”. It is a blend of 21 of the Champagne House’s best years dating back to 1961. Aged for 7 years in Collet’s century-old chalk cellars, this wine is exclusively sourced from the Grand Cru and Premier Cru villages of Cramant, Ambonnay, Mailly, Avize, Hautvillers, Villers Marmery, Vertus, Verzenay and Chouilly. This one-of-a-kind Champagne was made in very limited quantity and will never be seen again.

    Disgorged and blended in 2021 this rare Champagne is comprised of the 21 best vintage which includes: 1961, 1969 1971, 1979, 1980, 1981, 1982, 1985, 1986, 1988, 1989, 1991, 1993, 1995, 1996, 1999, 2002, 2004, 2006, 2008, & 2012.

    Refined bouquet of fresh honeysuckle, buttered toast and almonds. Incredible aged characteristics in this blend. Tiny, delicate bubbles with rich and decadent flavours of caramel, roasted nuts, nectarine and candied ginger. A very long, elegant and silky Champagne.
