2022 ‘The Nest’ Pinot Gris, Lake Chalice
£1750Add to BasketAromas of freshly cut pear mingle with citrus undertones on this softly textured Pinot Gris. The palate is beautifully balanced with layers of poached pear, honeycomb and a touch of sweet pastry on the finish.
The fruit for this wine is predominantly sourced from selected vineyards in the flood plains of Marlborough’s lower Wairau Valley. The eastern flood plain soils are nutrient-rich silty loam, renowned for delivering fruit-forward notes. Once the grapes were picked they were immediately pressed to minimise skin contact followed by cool fermentation in with selected yeasts in temperature-controlled stainless steel tanks, in order to capture the desired level of fruity aromatics. A small proportion was aged in seasoned French oak adding complexity to the wine.

The bustling market stalls fill the air with the aroma of ripe berries and dried fruits. The spice stall owners spruik their wears, waving vanilla pods and pouring cardamom spices theatrically onto their scales in front of your nose. All these elements combine in glorious cinematic technicolour for the tastebuds. Softly textured with ripe berry fruits and dried currants set against a backdrop of warmed spices. Rub this bottle of Waipara Pinot Noir three times before pouring it, and the first sip might transport you there again. No magic carpet required.

The fruit is harvested from a single vineyard, the Walsh block in the Woodbourne area of Marlborough’s central Wairau region. The vineyard’s stony, sandy soil results in low yields of intensely flavoured fruit from a combination of different pruning methods.

2023 ‘The Raptor’ Chardonnay, Lake Chalice
£1950Add to BasketA full-bodied Chardonnay with bold flinty notes surrounded by peach undertones. The creamy palate has a wonderful balancing freshness and reveals layers of flint, lemon blossom and biscuity nuances complemented by subtle oak spice.
The grapes are sourced exclusively from mature vines within a single hectare vineyard block called the Reed Vineyard. This beautiful vineyard is situated on an old riverbed, where the shallow, loamy Renwick soils are derived from stony alluvium and offer the wine excellent drainage. The vines are a mixture of Burgundian Chardonnay clones; predominantly they are clone 95, with a proportion of Mendoza clones and some clone 15. The fruit from this block has become renowned for delivering crisp, flinty flavours.
The grapes were carefully selected and vinified with 100% wild yeasts. Some were vinified as whole bunches, to add complexity. Fermentation took place in a selection of new and seasoned French oak barriques, lasting 10 months where malolactic fermentation took place imparting a creamy texture.

Generous and full, layered with grapefruit and blackcurrant, this wine is underpinned by salt and mineral notes through to a long, concentrated finish.
The grapes are sourced from a single vineyard in the rich loamy soils of the Dillons Point area of Marlborough’s Lower Wairau Valley. Shaped by a slow convergence of tectonic plates, the Wairau Valley offers a veritable patchwork of contrasting soil types linking the Alps in the west with the Pacific Ocean in the east. The eastern flood plain soils are nutrient-rich silty loam, renowned for delivering Marlborough’s iconic tropical flavoured Sauvignon Blanc. In order to capture the maximum expression of regional characteristics, the pruning, irrigation and canopy management is dictated by each variety and by each block of land.

The grapes are sourced exclusively from Lake Chalice’s 11-hectare Eyrie Vineyard, which is located in the lower Waihopai Valley. The fruit is a hand-picked selection of clone 115 Pinot Noir. The 15-year-old vines are pruned to two canes, and the yields are carefully monitored, resulting in an intense fruit expression in the grapes. The high clay content in the soil profile is well suited to bringing out the best in the Pinot Noir variety.
