‘Abacus’ offers a blend of strictly hand-picked, 100% estate-grown organic fruit sourced from older Grenache, Cinsault, Syrah, and Cabernet Sauvignon vines, undergoing a very delicate direct pressing to ensure only the free-run juice is utilized. Following this meticulous process, the wine rests in stainless steel for 2 months at 15°C before undergoing a light filtration in preparation for bottling.
