Description
Faithful to the vision of its founders, Abelé 1757 selects sites with the most promising aromatic potential. The vineyards are situated on slopes at varying altitudes, benefitting from optimal sun exposure and the renowned chalky soils, which contribute minerality and finesse to the wines. Chardonnay leaves an indelible impression on the signature Abelé 1757 style, where is is cultivated on the premium soils of the Côte des Blancs, together with grapes grown in Vitryat and Sézannais for consistency of style and a delicious saline note on the palate. To guarantee a constant supply of very high quality, Abelé 1757 has forged close links with a small circle of passionate vine-growers. These craftsmen cultivate with the deepest respect for nature on plots sometimes as small as gardens. Meticulous hand-harvesting ensures only perfectly ripe grapes are selected for pressing.
Fermentation took place in stainless steel tanks to maintain freshness, with extended ageing on the lees, adding complexity and richness. The blend, which includes 25% reserve wines, was bottled and skilfully stacked in an impressive feat of balance on wooden lathes, all set for cellar-ageing in the deep, chalky cellars. The Abelé 1757 Brut cuvée was aged for three to four years to encapsulate the signature House style, while the liqueur d’éxpedition was a 100% multi-vintage Chardonnay. 6g/l dosage enhanced the wine’s inherent characteristics and satisfies the most discerning of palates.
