‘Aged on the lees for 3-to-5 years in cellars dug out of ancient Gallo-Roman chalk pits, this rosé Champagne is serious, and seriously delicious. Displaying a medium ‘vieux rose’ hue and narrow cordon, the wine exudes summer pudding fruits and fresh bread notes. On the palate, the wine shows finesse in its light body, zippy acidity and ‘crackling’ mousse texture. Nicely balanced with good length. An irresistible rosé Champagne combining great precision, freshness and fullness with charming aromas of wild strawberries, red and black currants, along with beautiful hints of vanilla and cinnamon spice.

This rosé Champagne was produced using the solera method. Palmer & Co is one of the rare champagne houses to have adapted this well-known technique, often used for Spanish wines, for the creation of its champagnes. Each year, Palmer & Co adds red wines from the new harvest, which have been barrel-aged and typically amounts to 6-7%, to compensate for the wine drawn off. This perpetual reserve was started 40 years ago and is kept in stainless steel tanks. It forms an extraordinary library expressing a unique combination of red fruit and spice aromas and flavours. This rosé Champagne was then bottle-aged for two to three years on the lees, in the 18-metre- deep chalk cellars which imbues the wine with incredible complexity.

This cuvée reached full maturity after a minimum of three years of bottle ageing in the historic, limestone cellars in Ay, which are centuries old.

To celebrate its centenary, Champagne Collet has made a commemorative bottling called “Cuvée n°21”. It is a blend of 21 of the Champagne House’s best years dating back to 1961. Aged for 7 years in Collet’s century-old chalk cellars, this wine is exclusively sourced from the Grand Cru and Premier Cru villages of Cramant, Ambonnay, Mailly, Avize, Hautvillers, Villers Marmery, Vertus, Verzenay and Chouilly. This one-of-a-kind Champagne was made in very limited quantity and will never be seen again.

Disgorged and blended in 2021 this rare Champagne is comprised of the 21 best vintage which includes: 1961, 1969 1971, 1979, 1980, 1981, 1982, 1985, 1986, 1988, 1989, 1991, 1993, 1995, 1996, 1999, 2002, 2004, 2006, 2008, & 2012.

Refined bouquet of fresh honeysuckle, buttered toast and almonds. Incredible aged characteristics in this blend. Tiny, delicate bubbles with rich and decadent flavours of caramel, roasted nuts, nectarine and candied ginger. A very long, elegant and silky Champagne.
