The indigenous variety of Thrapshathiri (pronounced Thrap-sah-THEE-ree) is grown in the Dafnes region, in vineyards located at an altitude of 400 to 500 metres above sea level. At this elevation, the cool Aegean summer breezes refresh the vines during the summer, when temperatures can reach 35°C. The cooler nights can drop to 15°C, and this diurnal temperature difference retains natural acidity in the grapes, balancing this rich and intensely aromatic variety.
