    The village folk still call it Niuru Maru: Negroamaro, meaning bitter black (red).

    In another era, Negroamaro was grown solely to ship to the north of Italy where the colder climate made it challenging to obtain the desired color and alcohol levels in the wines they produced. But in recent decades, more and more Salento wineries have looked to the variety as one of the most noble expressions of Pugliese viticulture.

    FCantele’s rosé wines are made from a selection of top Negroamaro grapes that are used to make their flagship wines. Winemaker Gianni Cantele, to achieve their deep rose hue and their rich aroma and flavour, employs the Italian salasso method (known in English and French as saignée): as the Negroamaro grapes are macerating on their skins to extract the variety’s naturally dark colour, he racks off — in other words, he “bleeds” off (hence the name) — some of the must to another tank. After vinification, the resulting wine is aged and bottled as the Rosato di Negroamaro (rosé from Negroamaro).

    This is an ideal wine for appetizers, pizza, fish and seafood, and simple first and second courses — especially vegetable-based recipes.

    The Rosso IGT Puglia Vino Appassimento Gold Release from Ca’Vittoria is a 60% Negroamaro, 25% Merlot, 15% Primitivo blend of grapes grown and harvested in the Salento area of Puglia, with picking occurring as late as October. This gives a high level of sugar and high alcohol, required for the Appassimento method. Ripe grapes mature on the vine for about 15 days, during which period 50% of their weight and moisture is lost. After a rigorous hand harvest, the grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavours and the characteristic ruby red colour. The wine is then left in oak for around 3-4 months. The resulting wine is concentrated and moreish, with characteristic notes of plums and raisins.

    The Cantele Salice Salentino Riserva is made from 100% Negroamaro grapes sourced from Cantele’s top parcels, this is one of Cantele’s most critically acclaimed wines, widely recognised as a classic.

    Aged for approximately 6 months in oak barriques the wine is an intense ruby ​​red in colour with aromas of caramelised red fruits, spices and delicate floral notes. The palate is rich with dark cherry and plum fruits supported by zinging acidity and lively minerality. The finish is smooth and long with well integrated supple tannins.

    Ideal for roast meats, especially rosemary and garlic-studded lamb.

    A generous blend of equal parts Negroamaro & Primitivo, the powerhouse grapes of Puglia.  This beauty is a fleshy wine with dark berried fruit layered with chocolate and hints of spice. Smooth with great purity of fruit through to a long sustained finish. Quite delicious.

    The vineyard is located in Salento, Puglia, where the vines are grown at an altitude of approximately 100 metres above sea level. The temperatures are relatively high over the summer, which encourages the berries to ripen evenly. The soil is predominantly clay with some rocks, which help drainage. The vines are old, gnarly bush vines that are over 50 years old and are planted at a density of 4,500 vines per hectare. The Primitivo is grown in the highly reputed area of Manduria, locally regarded as the best in Puglia. The harvest takes place in September when the grapes are slightly overripe.

    While Cantele’s approach to grape growing and winemaking is rooted in the traditions of Salento viticulture, it doesn’t mean that the current generation of the Cantele family doesn’t continue to experiment and push the boundaries of southern Italian winemaking.

    One of its most critically acclaimed projects has been AMATIVO, a wine made from a blend of two of Puglia’s most important red grape varieties: Negroamaro and Primitivo. And the name of the wine, like the blend, is a composite of the grapes that go into it: AMA from the amaro in Negroamaro and TIVO from Primitivo.

    An “international-style” wine created by blending two native grapes from Puglia, the flavour profile of this cuvée gets its earthiness from the Negroamaro and its rich fruit character from the Primitivo. While the Negroamaro imparts freshness and just the right amount of tannic structure, the Primitivo gives the wine balance through its rich red fruit flavour.
