Pegasus Bay’s house style emphasises extended “hang time” and, when vintage conditions allow, a touch of noble botrytis, adding complexity and depth. Grapes are hand-harvested, and the free-run juice is slowly fermented at cool temperatures to preserve delicate aromatics. A gentle handling process retains a touch of natural spritz, enhancing freshness and liveliness. The result is a wine that captures the essence of North Canterbury with both vibrancy and finesse.

  The 2022 Pegasus Bay Riesling shines in the glass with a luminous lemon hue, hinting at the energy within. On the nose, it bursts with a dynamic medley of citrus and exotic fruits, grapefruit, lime sherbet, green apple, and lychee lifted by floral overtones of rose petal and geranium.   Pegasus Bay, located in North Canterbury’s Waipara Valley, is a benchmark New Zealand winery founded by the Donaldson family and known for its dedication to crafting wines of character and longevity.

  ‘Finale’ is a botrytised dessert wine made only in exceptional vintages when late-season conditions allow noble rot to develop. Inspired by the great wines of Sauternes and crafted using traditional Bordeaux techniques, ‘Finale’ is a richly expressive blend of Semillon and Sauvignon Blanc. Only the most beautifully raisined, botrytis-affected grapes are hand-selected, gently pressed, and vinified in French oak barriques (50% new). Fermented and matured on lees for 12 months before blending and bottling, ‘Finale’ is a testament to both patience and precision in winemaking.

  The 2019 ‘Finale’ glows a radiant golden hue, immediately hinting at its opulence. The bouquet is captivating, an elegant mosaic of ripe apricot, lemon curd, and crystallised ginger, layered with aromas of honeysuckle, dried mango, and a delicate wisp of baking spice.   This is a gorgeous Pinot Noir made from grapes grown across the Marlborough province: in the lower Waihopai and Wairau Valleys, the upper Brancott Valley and the Kekerengu Coast.

  In the glass, it displays ripe dark and red cherry fruits, spice and leather with a hint of smoky oak.  On the palate, it is full-bodied with round, mouth-filling flavours of plum, brambly fruit, dark cherry and savoury herbs.  The oak integrates nicely with the fruit and silky tannins.   Drink now to 2029.  This wine is great with venison, duck, roasted beetroot, rare lamb and wild mushrooms.

  This Chablis-style single-vineyard, limited-release, unoaked Chardonnay has been fermented and aged for eleven months in a concrete egg. The shape of the vessel causes the yeast to be in a constant state of flux, giving the wine richness and complexity, without any wood flavour to mask the fruit character. Concentrated baked yellow apple, peach, dried apricots and graphite with hints of almond and spices on the nose. In the mouth, it is full-bodied with a complex depth of flavour. Highly layered with a persistent, creamy, spiced apricot finish. The bottles are sealed with vegan wax.

  Featuring the Proprietor’s Grandfather, Sydney Neill – Wine Merchant, on the label, Picnic Riesling is described by the winery as ‘our perennial favourite and a wonderful introduction to the pleasure of Central Otago Riesling. We think it is just as much a dinner wine as a luncheon – equally enjoyable at home outdoors, as at the Captain’s Table’.

  This 2016 vintage is invitingly scented, with lively, youthful, lemon and green apple flavours, a hint of toasty, bottle-aged characters, and good concentration.
