White WineThis fantastic taut, classic Petit Chablis is made by Florent Dauvissat, part of the famous Dauvissant Chablis family. While they are the newest of the Dauvissat Domaines, their vineyards now stretch over 10 hectares, with parcels in Petit Chablis, AC Chablis village and the 1er cru Beauroy.
In the glass, it has aromas of lemon blossom, green apple and striking oyster shell salinity. The palate is fine, and elegant, with a steely citrusy core. This is an ideal wine for that Sunday roast chicken.
White WineDomaine Gauby is located close to the small town of Calce in the Roussillon. Now run by Gérard Gauby, his wife Ghislaine and their son Lionel, who is responsible for the winemaking, the domaine has gained a reputation for making wines of exemplary freshness in a hot climate.
This 2020 `Calcinaires` Blanc has a fresh nose with delicate aromas of white flowers and notes of peach and quince. The palate is expressive with layers of citrus and stone fruit. A bright acidity is underpinned by a long mineral finish.
This blend of 40% Grenache Blanc, 30% Chardonnay, 20% Macabeu, and 10% Vermentino is sourced from a mixture of old and young vines planted on clay loam and limestone. The Chardonnay vines are average 45 years old and the Macabeu 80 years old, which gives the grapes great concentration. The Roussillon has incredibly diverse soils which, combined with the multiple aspects from the rolling hills, has given Gérard Gauby the freedom to experiment and maximise the potential of each grape variety.

White WineDomaine des Deux Roches translates as ‘Estate of the Two Rocks’, a reference to the position of this wine estate between the two distinctive, rocky escarpments of Solutre and Vergisson, in the Maconnais area of southern Burgundy. Owners of the Domaine, Jean-Luc Terrier and Christian Collovray make this great Saint-Veran, a white that beats many Burgundies for sheer deliciousness.
Terres Noires is a single vineyard on the south side of the landmark rock of Solutré, where limestone soils mix with black decomposed rock. One-third of this Chardonnay is matured in oak barrels for four months and it is this careful use of oak that is key to the style. It has a lovely forward and expressive peachy fruit style. A medium oaked chardonnay with lemon and butter and a touch of honeysuckle on the nose. Soft and creamy with plenty of body and texture.

The vines are grown in the heart of the Chablis appellation, where the climate is continental. Cold winters allow the vine to rest and the sap to descend and warm summers, enable the grapes to ripen. The yields are carefully controlled to ensure the highest quality of fruit, by concentrating the flavours in the grapes. The vineyards are cultivated in the traditional manner in accordance with the appellation regulations, but also in order to respect the land and its environment and the biodiversity of the soil. The soils are predominantly Kimmeridgian, which comprise limestone and clay, from which the wines of Chablis draw their unique character, purity and minerality.
White WineIn the glass, the Organic Bourgogne Hautes Côtes de Nuits is straw yellow with white highlights. It has very intense bouquet perfumes with notes of citrus zest, green apple and toasty aromas of fresh brioche. The palate has excellent tension with concentrated fruit flavours that linger on the finish.
The Hautes Côte de Nuits vineyards run parallel to those of the Côte de Nuits but are situated at a higher altitude. This wine comes from 1.05ha of organically certified Chardonnay vines. They are 35 years old on average and are planted at a density of 3,500 vines per hectare. The vineyard is east-facing and planted on limestone soil, which gives the resulting wine great freshness and fine minerality.
White WineThe appellation of Santenay lies at the southern extremity of the Cote de Beaune and is famously said to be the home of both the nymph of water and the god of wine as it is both a spa and a winegrowing centre. Producing mainly Pinot Noir but the chardonnay should not be overlooked as they can be exceptional in their minerality and freshness.
This very well made Chardonnay from Jean-Baptiste Jessiaume is fresh and zesty with a touch of nuttiness to the nectarine-like aromas. The fruit is high quality as you would expect with delicate weight, gentle oak and minerality adding texture. The finish is long and persistent. Drink now to 2030 and match with Turbot and fresh truffles.

The Chardonnay grapes come from the Côtes Catalans, which is the principle IGP allowing only mono-varietal wines. The vines thrive at an altitude of 385 metres’ elevation in the Haute Vallée de l’Agly, in the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain-freshness from the foothills of the Pyrenees which balance the hot, arid summers. The terroir is made up of a mosaic of black schist soils, which date back to the Cretaceous period. The schistous marl produces shallow soils, which force the vines to send their roots deep in search of water and nutrients. The vineyard is certified
organic.
White WineThe nose reveals hints of white flowers, citrus, and yellow fruits. The palate enjoys a crisp, fresh attack with a beautiful tension. This cuvée pairs perfectly with seafood.
The grapes are exclusively from the single vineyard of ‘Saint Jacques’ in the Rully appellation, the most northern village in the Côte Chalonnaise. Saint Jacques was one of the first named plots or ‘lieu-dit’ in Rully, which has become renowned for its high quality. The grapes are grown in mainly clay and limestone soils, producing round and appealing wines.
White WineAgnes and Didier Dauvissat’s Beauroy sings with racy florals and minerals with surprising richness. The wine sees a tiny amount of oak, giving it a wonderful baked apple, quince paste and citrus personality that complements the minerality and chamomile notes. Long and intriguing, with a slight hint of salinity and sea spray.
Beauroy is a well-exposed, south-facing premier cru on the left bank of the Serein River, which cuts through the centre of the appellation. It has rich soil of clay and limestone with lots of fossilized oysters.
White WineCaroline Lestimé, winemaker at Jean-Noël Gagnard, decided to plant Chardonnay vines on this plot of the Hautes-Côtes de Beaune, back in 2007. The vineyard is in La Rochepot, on an embankment overlooking and bordering the western part of the Saint-Aubin appellation Le Ban. The name “Sous Éguisons” refers to the cliff above the vineyard. The cliff offers protection from the north winds, which is a significant advantage given how harsh the climate is and how bitter the spring frosts are at this altitude. The natural growth cycle of the vines is also slower and the grapes mature a full week later than at lower levels.
The wine itself is a revelation, pure, pristine and delicious. The matchstick mineral nose shows pure lemony fruit with a hint of florality. The palate is linear and precise with taut lemony fruit and a fine tangy, stony mineral quality. There’s just the faintest hint of spicy, toasty oak, but the real theme here is pure, vital lemon fruit with great precision and lovely integrated acidity.
White WineThis 2019 Fixin Blanc is a beautiful pale yellow colour that displays intense aromas of white peach and stone fruit, with hints of almond and gentle spice from time in oak. The palate is vibrant and fresh yet full-bodied and complex, and the finish long. Just 1500 bottles were produced. According to winemaker Grégory Patriat, the 2019 vintage will go down as a legendary one, just like 1969, 1979, 1999 and 2009. The summer months were very dry and the yields were much lower than normal due to the lack of water in the vineyards. However, this also resulted in smaller berries and highly concentrated aromas and flavours with the health of the grapes harvested exceptional. Harvest began in mid September.
This is the first vintage of Grégory’s Fixin Blanc which comes from a tiny plot within the very small Fixin appellation. Fixin is a village at the northern end of the Côte de Nuits. Apart from its neighbour, Marsannay, Fixin is the most northerly appellation in the Côte de Nuits, covering roughly 90 hectares. It is known principally for Pinot Noir. There are just 5 hectares planted to Chardonnay. Boisset’s Fixin Blanc comes from a small plot of 40 year old vines which are located beneath the famous 1er Cru ‘Clos du Chapitre’ on clay and limestone soils.
White WinePale yellow in colour with golden reflections. The seductive nose has aromas of green apple and white flowers that mingle with notes of toast and smoke. On the palate, the wine is supple with superb balanced and a bright, zesty acidity, which lifts the finish.
Grégory is renowned for his ingenuity in sourcing the highest quality fruit from small parcels, or ‘lieu-dits’, across the region, producing the finest wine that the vintage can offer. Nestled between the two famed villages of Volnay and Meursault, Auxey-Duresses has only 150 hectares of vines. Today, it producers some of the Côte’s best value for money wines. The fruit for Auxey-Duresses comes from a 0.31-hectare plot located in the extension of the Meursault appellation, where the soils are mostly limestone and the vines face northeast. The balance between warm and cool influences results in a long, slow ripening period, allowing the grapes to retain their acidity and lending excellent balance to the finished wines.
White WineThis chardonnay from the standout vintage of 2019 exhibits a pretty bouquet of fresh pear, citrus oil and white flowers, the 2019 Saint-Romain is medium to full-bodied, supple but lively, with a bright spine of acidity and a gently chalky finish.
Fruit for this Chardonnay is sourced from 2 lieu-dits in Saint-Romain, 80% from `Sous Roches` and the remaining 20% from `Jarrons`, located at the bottom of the village. The 30-year-old vines are planted on rocky soils with excellent drainage which allow the grapes to ripen at a steady pace and retain their vibrant flavours.
