    A crisp, aromatic wine, showing great purity and a precise expression of the Verdejo variety. Fresh notes of pear, grass, fennel and white pepper lead to a dry and refreshing palate, with excellent balance and a citrus finish.

    The grapes are grown in high-altitude vineyards in the northernmost part of Central Castile, where the continental climate enjoys sunny days and cool nights. This diurnal temperature difference encourages grapes with intense fruit and excellent varietal definition, which retaining remarkable freshness. The vineyards are sustainably managed and organically farmed as part of an integrated ecosystem. Low annual rainfall results in low disease pressure, enabling the vines to be grown without the aid of fungicides. Fertilisers have never been used, only organic manure is applied and weed control is managed by a low, superficial tilling. Rainwater is collected in a small reservoir and is used for drip irrigation in the case of extreme drought.

    Zibibbo, as it is known locally in Sicily, is the synonym for Muscat of Alexandria. It produces highly aromatic wines and is the local’s pride and joy. Here in these sundrenched vineyards, the highest standards are attained through the use of innovative technology and the careful process of mapping the terroir according to the weather patterns, harvesting time, soils and vine age. The grapes undergo a sensory analysis and are hand-harvested at the optimum maturity levels, according to the terroir and microclimate of the vineyard. They are then harvested into 20-kilogram containers, to prevent the grapes from being prematurely crushed. The vineyards are made up of distinct soil and climate conditions and range from sea-level up to 700 metres above sea level, imparting subtle complexity into the wine.

    A richly flavoured and aromatic wine with exuberant tropical and herbal notes complemented by a lovely citrus freshness on the zesty finish.

    Herdade do Rocim is associated with the Sustainable Program of the Alentejo Viticulture. This wine is made from organically grown grapes; 70% of the vineyard is certified and the remaining 30% is in conversion. The estate is situated on the Vidigueira fault, a 30-mile long east-west facing escarpment that rises to 420 metres. The fault significantly influences the climate, trapping the cool, humid Atlantic winds, so despite its southern location, it is one of the most temperate sub-regions in the Alentejo. These cooling and humid influences descend at night, creating diurnal temperature differences which extend the ripening period; with the warm days concentrating the flavours in the grapes, while balancing natural acidity is retained during the cool nights. The soils are of granitic and schistous origin. The water level in the soil is rich and superficial, nourishing the vines during the warm summers.

    Bodegas Nivarius specialises in the production of white wines from cool-climate vineyards in Rioja.

    This 100% Tempranillo Blanco has intense, fruity notes of zesty citrus, ripe apple and pear are complemented by white floral blossom and mineral nuances. Fresh and beautifully balanced, with a creamy texture and a long finish.

    Nivarius, meaning ‘snow-drift’, takes its name from the common sight of the snowy blanket which covers the vineyards in winter.

    The Tempranillo Blanco grapes are grown in the cool-climate sub regions of the Iregua Valley and the mountainous area of Nalda, Albelda and Clavijo. The warm days and cool nights prolong the ripening period and preserve aromatic richness in the fruit. The soils made up of a mixture of ferrous clay, with calcareous clay. The soils are generally deep with sandy components, which imparts agility and depth to the wine. The Tempranillo Blanco variety produces few clusters, which means it ripens quickly, this trait is balanced by the soils which impart natural freshness. The vineyards are farmed using sustainable methods; chemical sprays are not used, instead organic products are employed in order to protect the environment and biodiversity of the vineyard. This sustainable approach encourages the best expression of the terroir and a true reflection of the aromas and flavours of the white Rioja grape varieties.

    The name of the wine originates from the fact that the first crop of Roussanne from the 2000 vintage was covered in tiny ‘Money Spiders’. Popular belief is that kindness to these creatures will bring good luck, so Chester refrained from sending the spiders to their death. By the next year, the Money Spiders had relocated, making the first release of this wine in 2001.

These are organic, Marlborough wines, reliant on selected blocks from the family’s vines and exceptional fruit selection.     Bodegas Nivarius specialises in the production of white wines from cool-climate vineyards in Rioja.  This wine represents the perfect blend of the terroir and the cool-climate region, with its warm days and cool nights prolonging the ripening period and encouraging aromatic richness. The Viura grapes come from the sandy soils of the Najerilla, and the limestone soils of the Sonsierra, and are blended with Maturana Blanca from the Iregua Valley, grown in sandy soils. Maturana Blanca is an ancient native variety with small clusters and small, elliptical grapes which produces vibrant, tangy wines characterised by high, natural acidity.

    In the glass it has an aromatic and complex bouquet of baked apple, floral and balsamic notes, layered with nutty tones and a hint of minerality. The palate is fresh, rounded and balanced, with lovely texture and finishes with stone fruits and a touch of almond.

The vines are grown on the Roussillon plains where the soils are made up of alluvial marls. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees which offer balance to the hot, arid summers. The vineyard is certified organic.
