The Premier Cru area of Fourchaume is an extension of the northerly slopes of the Chablis Grands Crus. Fourchaume is distinguished by its power, elegance, bouquet and length – classic and mineral Chablis.

The grapes to produce Chablis 1er Cru Fourchaume Domaine Jean Goulley are carefully selected and fermented with natural yeasts in stainless steel vats to show the characteristics of this impressive terroir. Matured for 18 months sur lie in stainless steel barrels to achieve texture, roundness and complexity.

Description

Domaine Jean Goulley is a relatively new company that was formed in 1986 founded by Jean Goulley and now run by his son Philippe. It was the amalgamation of several family plots into one new Domaine. The Domaine produces “Petit Chablis”, “Chablis” and “Chablis Premier Cru” on the renowned vineyards of Fourchaume, Montmains and Mont de Milieu. 4.5 of the 11 hectares that the Domaine owns are in the Premier Cru districts and constitute the heart and soul of the Domaine Jean Goulley.
All of the vineyards are farmed organically with great stress on the overall health of the vines and working with reduced yields, and the vines are produced according to organic methods using natural vinification and restricted use of sulphur.  In 1991 the domain became one of the very first certified organic producers in Chablis.
Domaine Jean Goulley is well regarded for their mineral style of Chablis’s that have a purity and vivacity that pays homage to the Chablis of the past.

Vinified with minimal intervention, the grapes were carefully selected. Fermentation took place with natural yeasts for two to three weeks at 21°C in temperature-controlled stainless steel vats, to showcase the characteristics of this impressive terroir. The wine was matured for 18 months in stainless steel vats, of which it spent nine months on its fine lees to gain texture, weight and complexity.
