At Chapel Hill there exists a deep respect for the land and their vines – managed by Rachel Steer (viticulturist), and under the diligent guidance of winemakers Michael Fragos and Bryn Richards, Chapel Hill hand craft wines with integrity and typicity. All their wines are handled gently in small batches with a restrained winemaking philosophy. With their red wines being open fermented, plunged regularly, basket pressed and not filtered, which ensures the wonderful authenticity and varietal character.

The 2021 MV Shiraz is a plush and generous wine from McLaren Vale showing all its wonderful plump smooth drinking qualities.  Regional aromas of wild berries, pepper, chocolate and dried herbs. The palate has an approachable swagger and that regional savoury nuance. Delivering on the taught palate wild berries, cassis, star anise and tobacco. Time in oak has wrapped around the fruit acidity and silky tannins resulting in a vibrant style that needs a short time in the glass before it reveals its true character.

Description

The winery’s history is intertwined with the Seaview Chapel, an 1865 ironstone building that still stands proudly on the estate. This historic chapel is now an integral part of the tasting room. The vineyard was planted in 1972, and the first vintage was produced in 1975. The beautiful Chapel Hill vineyard overlooks sea views and boasts elevation, ancient rocks, contoured plantings, and moderating sea breezes. The undulating landscape results in a series of small blocks with unique combinations of geology, soil, aspect, and climate.

The fruit for Chapel Hill The MV Shiraz is sourced from 50-year-old vines. These mature vines contribute depth and intensity to the wine. Harvesting occurs when the grapes reach optimal ripeness. Skilled vineyard workers handpick the clusters, ensuring only the finest fruit makes its way to the winery.

Once at the winery, the grapes undergo a gentle crushing process to extract the juice without damaging the seeds or skins. Fermentation takes place in stainless steel tanks or oak barrels. Yeast converts the grape sugars into alcohol, releasing flavours and aromas.

Chapel Hill The MV Shiraz spends time maturing in French oak barrels. This step enhances the wine’s elegance and softens the tannins. Oak imparts subtle flavours, such as vanilla, spice, and toast, which integrate harmoniously with the fruit characteristics. After fermentation and maturation, the winemaker carefully selects the best barrels for blending.
The wine continues to age in oak, allowing it to develop complexity, structure, and balance.

Once deemed ready, Chapel Hill The MV Shiraz is bottled. The winery ensures each bottle reflects the wine’s true character. Some bottles are enjoyed immediately, while others are cellared for aging. Proper storage allows the wine to evolve gracefully over time.
