Château de Lascaux

2022 Domaine Cavalier Rouge, Chateau de Lascaux

Languedoc, FranceVintage: 2022

This wine is a delightful blend of Cabernet-Sauvignon, Syrah, Merlot, and Cinsault grapes from the St Guilhem le Désert region in the sunny Val de Montferrand.   In the glass, it offers aromas of black cherries and eucalyptus, with hints of cocoa. On the palate, it is fresh, well-structured as well as having a finesse not often found in these grapes from this part of the world.   With 10 generations of organic winemaking under their belt, this family Chateau know what they’re doing!

Cellaring potential is 3 to 5 years, and it pairs wonderfully with appetizers, grilled dishes, burgers, and roasted Camembert.

Description

Château de Lascaux is a family domain nestled in the heart of a garrigue landscape, leading to the radiant Pic Saint-Loup. The 14th and 15th generations of the Cavalier family continue a legacy in harmony with the natural environment. Biodynamic farming and a deep connection to nature guide their winemaking process. Each day, their wines are nourished by exchanges, encounters, and balance.

Traditional winemaking with short maceration of 3 to 4 days followed by alcoholic fermentation for 10 days. Aging in concrete tanks.
