Wallace takes on the traditional Barossa Valley blend of Shiraz and Grenache in a modern way. The Shiraz brings backbone, flesh and body to the wine with the Grenache adding a soft, vibrant juiciness.
Wallace is made from exceptional old vine fruit was sourced from the famed Ebenezer sub district at the northern tip of the Barossa Valley. Vine ages are 50—80 years old for the Shiraz and 50—100 years old for the Grenache.
In the glass, the wine has lifted aromas of bright red fruits with fresh spice notes of star anise and cedar. The palate has bright red berry fruit, redcurrant and liquorice flavours that complement the soft and rounded Grenache fruit tannin and the savoury finish of Shiraz. Wallace is an ancestral name of Colin’s wife, Judith, whose family hail from the old market town of Cupar in Fife, Scotland. Judith’s Celtic ancestry is reflected in the three elements of the Wallace symbol – the Celtic cross, thistle and the Celtic knot pattern.

Made from exceptional old vine fruit was sourced from the famed Ebenezer sub district at the northern tip of the Barossa Valley. These old vines are between 35-120 years old.
In the glass there is an explosion of brooding dark tones with bright cassis and coffee bean hints. Bishop is the family name of Colin’s wife’ Judith. Fittingly the sign of Venus, a symbol which has come to represent women and feminine energy, is the centrepiece of the Bishop label. In mythology, the symbol meant the Roman goddess Venus or her Greek equivalent Aphrodite. But the sign has also been linked back to ancient Egypt – a nod to Bishop’s link to Amon-Ra and Anaperenna.

A stupendous blend of Grenache, Mataro and Shiraz is elegant and restrained with a subtle note of vanilla and pretty floral notes. The Grenache supplies tangy sour cherry to this blend whilst Mataro offers a savoury cocoa note and Shiraz holds it all together with a backbone of fine tannins and a touch of brambly fruit.
Moppa Springs, Ebenezer, and Kalimna, are some of the driest areas in the Barossa. This hard country is cold, wet and frosty during pruning, then hot, dry and dusty during harvest. These are the kind of tough conditions that ensure Grenache, Mataro, and Shiraz give their best.
The grapes are hand-forked into Rockford’s famed 1880’s Bagshaw de-stemmer, open-fermented and then gently basket pressed. All of the components for Moppa Springs are aged separately in a combination of seasoned American and French oak hogsheads and large vats to allow the tannins to soften and colours and flavours to consolidate.
The Abednego completes the Icon trio from Grant Burge Wines, sitting alongside the highly awarded Meshach and Shadrach which are Grant’s flagship Shiraz and Cabernet Sauvignon. The wine is 100% Barossa using fruit sourced from Grant’s own vineyards with an average age of 110 years. The old vines deliver fruit with incredible concentration and depth giving the resultant wine the ability to develop over many years. The iconic 2016 Abednego is a richly flavoured and elegantly structured wine with a beautifully balanced palate, complemented by flavours of plums, spice and liquorice with hints of vanilla. The origin of the name of this wine comes from the fact that Abednego in Hebrew means the ‘Servant of Nego’, the Babylonian god of wisdom. Abednego, with Shadrach and Meshach, were cast into the fiery furnace by King Nebuchadnezzar in 600BC. Grant Burge named his flagship and icon Shiraz Meshach (after his great grandfather Meshach Burge 1843-1942), and the icon Cabernet Sauvignon Shadrach (inspired by the story). This wine is Abednego to completer the trio with a trio of the Barossa’s finest grape varieties.
This incredible blend of Shiraz & Cabernet Sauvignon is a uniquely Australian blend that pays homage to the great Aussie wines of yesteryear. With plenty of sweet spice and brambly black fruit comes a concentrated blackcurrant and vanilla aroma, followed by a rich, full-bodied palate. One of the world’s truly iconic wines. Rockford’s Basket Press Shiraz represents the true style of Rockford and it draws heavily on the wisdom and shared knowledge of previous generations of Australian winemakers and recognises that at the heart of every great wine are great vineyards.
Basket Press Shiraz is made using equipment from the late nineteenth and early twentieth centuries, before aging in a collection of seasoned American and French oak hogsheads and large casks for two years. After bottling the wine is sealed under the highest quality cork. This approach enables Rockford to make the kind of traditional, soft, deeply coloured, earthy Australian red wine that Robert O’Callaghan first became fascinated by as a budding winemaker in the 1960s.

This Sparkling Shiraz is widely considered to be the benchmark of Australian Sparkling Shiraz. This traditional method of bubbly has spent 9 months ageing on its lees.
It is a wonderfully elegant sparkling red wine packed with juicy blackberry and black plum fruit, refreshing acidity and a tiny touch of balancing sweetness. The delicate, soft tannins add structure whilst the finish is lifted by the smooth, lively mousse.
