    The Butcher’s Cart harks back to a time when the Lindner family, founders of the great St Hallett’s estate, were family butchers and horse and cart was the norm to get about. Much has changed in the Barossa since then, but there is the same meticulous care now performed in the jewel-like vineyards and immaculate cellar. This fabulous dark, spicy Shiraz uses grapes from a selection of vineyards, all planted on the red-brown earth, which tends to produce a rich, generous wine. Each parcel is fermented separately, with a pump over six times a day to extract rich flavour and tannins. Ageing for 10 months in 20% new oak puts the finishing touches to this rich, unctuous red.

    Aroma: Dark ripe blackberry and raspberry, with liquorice and nutmeg spice

    Tahbilk Shiraz is sourced from nearly 30 hectares of vines planted at various times from the 1930s through the early 2000s. Made using traditional Tahbilk techniques; fermentation takes place in 150 + year old open vats, before maturation in French and American oak for 18 months before bottling. The resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared. Varietally expressive with ample plum and blackberry fruits, there is warm earth and spicy savouriness that immediately appeals with a backbone of fine, opulent tannins and a rich, persistent finish.

    Tahbilk’s vineyards are grouped along the banks of the Goulburn River, a branch of it which flows through the estate. The vines are grown at around 134 metres elevation of gently undulating and flat terrain. The soils are sandy loam with ferric oxide content, which vary from very fine sand near the anabranch to denser loams on the plains. Tahbilk has Shiraz vineyards dating back from the 1860s to the 1990s. The oldest surviving block is the ‘1860 block’; planted on its own roots in sandy soils, which has made it impossible for phylloxera to colonise the vine roots.

    This wine is jam-packed with Barossa Shiraz and Mataro (Mourvedre) flavours….plums, black fruits and warm spices of cinnamon, nutmeg and 5 spices. There’s a touch of mid-palate sweetness, some mocha and black olive and the soft tannins are integrated seamlessly through the mid-palate. The subtle use of oak allows the rich dark fruit to take centre stage.

    This 2016 Shiraz/Viognier has a rather dark appearance with a vivid purple hue suggesting a complex dry red.  The nose is particularly intense, with peppery spice, hints of fragrant flower and perfume aromas, plus nectarines, apricots, ginger and herbs from the small parcel of viognier that the Shiraz is co-fermented with.  On the palate, the Shiraz is more dominant with sweeter fruit characters like blackberry, blueberry and boysenberry. The palate is rich and generous and soft silky tannins.

    The Kookaburra is a native Australian bird famous for its distinctive laughing call, Chester’s young daughters named them “Laughing Magpies”. The Magpie plumage is black with a stripe of white feathers, representing McLaren Vale’s first ever blend combining the (black) Shiraz and its white partner, Viognier.

    Eight uncles Shiraz has long been a favourite of ours and always impresses.  Elegant and restrained this wine delivers aromas of spice, leather, bramble and brooding dark fruits with charming complexity. The palate is well structured, with tight tannins and a warming embrace of boysenberry and plum, underpinned by wonderfully integrated spice through to a deliciously long finish.

    This wine is made from old vine fruit, which comes from the Wenzel Road ‘Saint Oaks’ vineyard, located in Balhannah, in the Adelaide Hills. It sits at 374 metres above sea level and at this elevation, the nights are cool with a constant breeze. The average daily maximum temperature is 22.9°C with a minimum temperature of 9.2°C minimum. This diurnal temperature variation encourages a gradual ripening process, resulting in concentrated fruit flavours with a lovely balancing acidity.

    This is a savoury medium-bodied Adelaide Hills Shiraz. In the glass, it has a dark red-black colour with a dark red hue. Aromas of liquorice and dark cherries are overlaid by some smoky cedar and dried meats with light pepper end notes. Medium-bodied flavours of dark cherries and liquorice are infused with subtle clove followed by some dried meats and spicy pepper. Fine-grained tannins with an aftertaste of spicy dark cherries, liquorice, clove infusions, dried meats and pepper.  Aged in French oak barriques and hogsheads for 17 months.
