    Crafted from hand-harvested fruit, it was barrel-fermented and aged in a mix of large oak vats and smaller barrels, and yet the oak, even at this young stage, is not dominant.  It has great concentration with excellent refreshing natural acidity which alludes to it being made from old vines.

    In the glass, it is a shimmery gold colour with aromas apple, white peach, citrus, wildflowers and light oak spice.  The palate is textured but crystalline, creamy and citrusy, flashy but classic—in short, everything you could ask for in a Burgundy Chardonnay!   Drink now to 2027.   Match with roast chicken or rich seafood like lobster, scallops or Turbot.

    Agnes and Didier Dauvissat’s Beauroy sings with racy florals and minerals with surprising richness. The wine sees a tiny amount of oak, giving it a wonderful baked apple, quince paste and citrus personality that complements the minerality and chamomile notes.     Beauroy is a well-exposed, south-facing premier cru on the left bank of the Serein River, which cuts through the centre of the appellation. It has rich soil of clay and limestone with lots of fossilized oysters.

    This “Vin de Terroir” was made from Ataraxia’s first vintage of organic grapes grown on its own vineyards. He presents a journey of conversion to organic principles that began five years ago. Spontaneous and complete barrel fermentation without additives, followed by maturation in specially selected French oak barrels, sourced exclusively from Burgundian coopers, were part of a gentle and minimalist winemaking approach without interfering with the natural vinification processes.
