    Made from Japan’s most important indigenous grape variety: Koshu.  Complex and layered aromas of green apple and lime are complemented by grassy notes, fennel, flint and coriander. This is bone dry and smooth on the tightly knitted palate with a tongue-tensing acidity enveloping the fruit through to a deliciously fresh and textured finish.

    The grapes for the Hishiyama Private Reserve are grown in a vineyard with a complex granitic soil structure. The warm climate promotes healthy grapes with a good phenolic maturity at harvest time. A modern long cordon training system is being used as an alternative to the traditional trellising methods. Significant advances have been made in limiting yields and focussing on canopy management. These endeavours have concentrated flavours and sugars, balancing the high acidity that occurs naturally in this variety.

    The “16 Hectares” range pays homage to the estate’s original Wallcliffe vineyard, spanning 16 hectares of coastal, gravelly soils.  It is wild-yeast fermented, with approximately a third aged in new French oak barrels (500L), followed by a year of maturation that balances oak texture and purity of fruit.

    In the glass, this Chardonnay engages the senses with a beguiling mix of citrus, lime zest and golden delicious apple complemented by lemon curd, pie pastry, and a soft overlay of toasted oak. Nuances of jasmine, jasmine blossom, and toasty almond further enhance its aromatic complexity. On the palate, it is both refined and focused: vibrant acidity drives a juicy core of white stone fruit and cucumber freshness, while a creamy texture melds with delicate hazelnut and oatmeal biscuit notes.     Sebastien Dampt is fast rising to the top echelons of Chablis winemaking.  Year upon year, he delivers remarkable wines that are an ode to the regional terroir, reflecting both their devotion to winemaking and the rich heritage of Chablis. The domain is undoubtedly a perfect embodiment of tradition that meets modernity in wine-making.

    This 2023 Chablis is made from five parcels of old vines (40-60 years old) that surround the Domaine in the village of Milly.   It’s seriously good Chablis, bone dry, chalky, with notes of Granny Smith apple and citrus fruits and a firm, mineral finish.

    In terms of vinification, Sébastien keeps it simple. His approach is traditional, as he learned from his father and grandfather. In Chablis, this means fermentation and maturation in steel tanks. Sébastien does not use winemaking techniques such as battonage or wood ageing; he is all about pure grape and terroir expression. The wine does undergo the usual malolactic fermentation in Chablis, which rounds out the acids just a little more.

Hand-harvested and whole-bunch pressed, the wine was fermented with indigenous yeasts in seasoned French oak barrels, allowing the purity of the site to shine through without oak influence.

    Aromatically vibrant and lifted, the nose reveals crystalline citrus, subtle florals, and a flinty minerality that is fast becoming the hallmark of Rays Road. On the palate, it offers remarkable concentration and textural finesse, with layers of lemon zest, white stone fruit, and saline complexity. A core of bright acidity drives the wine through to a long, mineral finish.

    This is the most complete expression of Rays Road to date, delicious now, yet destined to evolve gracefully over the next 5–7 years.

    Giugi Sesti grew up in Venice and much of his life has been dedicated to the study of astronomy, on which subject he is a published author. For thirty years Giugi organised an opera festival in Tuscany, whilst refurbishing the hamlet of the Castello di Argiano and its 102 hectares.  Now primarily run by his daughter Elisa, the winery Sesti makes a world renowned Brunello but if you want the Sesti experience without waiting for the Brunello’s to mature then this Rosso is exceptional.

    Crafted using organic and biodynamic wine making principles, this 100% Sangiovese is a delicious expression of Rosso di Montalcino.  In the glass it opens with aromas of rosemary, red summer berries and dark chocolate that lead into palate of gorgeous bright red fruit, touches of oak and tobacco, with savoury notes of mushroom.
