  Saint Véran is an appellation for dry white wines made from Chardonnay, which is situated in the southern half of the Mâconnais subregion of Burgundy. The Domaine Ferrand vineyard is situated in the village of Solutré Pouilly, on eastern and southeastern facing sunny slopes at an altitude of 250 to 300 metres above sea level. The vines have an average age of 50 years, with deep root systems penetrating the layers of soil, imparting complexity to the resulting wine.

  Domaine des Deux Roches translates as ‘Estate of the Two Rocks’, a reference to the position of this wine estate between the two distinctive, rocky escarpments of Solutre and Vergisson, in the Maconnais area of southern Burgundy. Owners of the Domaine, Jean-Luc Terrier and Christian Collovray make this great Saint-Veran, a white that beats many Burgundies for sheer deliciousness.

  Terres Noires is a single vineyard on the south side of the landmark rock of Solutré, where limestone soils mix with black decomposed rock. One-third of this Chardonnay is matured in oak barrels for four months and it is this careful use of oak that is key to the style. It has a lovely forward and expressive peachy fruit style. A medium oaked chardonnay with lemon and butter and a touch of honeysuckle on the nose. Soft and creamy with plenty of body and texture.

  An assemblage of over 100 Crus, this cuvée reveals a broad array of aromas reflecting the diverse terroirs of the Champagne region. The composition is completed with 35% reserve wines in order to preserve the Collet style year after year. The blend comprises 50% Pinot Meunier from the villages of the Marne Valley and the Ardre Valley, which brings tonicity, richness and tension to the wine. The Crus of the Aisne make a tender and round wine and punctuate the assemblage with exotic fruit notes. 30% Chardonnay from the Sézannais region adds enjoyment and harmony and the Crus of southern Epernay contribute tonic citrus notes. 20% Pinot Noir from the Côte des Bar contributes structure and tension.

  An intense and luminous peachy pink rosé delivers delicate aromas of mandarin, peach, mulberries and raspberries. Refreshing, with a richness of fruit and a subtle hint of cocoa which is supported by a round, supple and velvety structure. The beautiful, silky texture is sustained by an elegant effervescence.

  The grapes for this cuvée come from 20 Crus from the Grand and Premier Crus sites of the Champagne region. The Chardonnay comes predominantly from the Premier Cru of Vertus and contributes freshness and lemony notes, while the mineral dimension and flinty aromas, come from the Cru of Villers Marmery, which has a limestone soil. The Grands Crus and Premiers Crus villages of Chouilly, Avize, Oger and Vaudemange, complete the blend with strength and complexity. The Pinot Noir comes from the Grands Cru and Premiers Cru villages of Ay, Hautvillers, Avenay Val d’Or and Louvois; it produces light, tender and fruity wines, while the Pinot Meunier imparts a roundness and suppleness.   This is an exceptional blend of seven Grands Crus and 13 Premiers Crus. The Chardonnay, predominantly from the commune of Vertus, contributes freshness and citrus notes. The Premier Cru of Villers-Marmery contributes to the mineral dimension of the limestone terroir along with smoky touches. The Pinot Noir imparts a richness and power thanks to historic Crus such as Ay, Hautvillers and Avenay Val d’Or blended with Crus from Rilly la Montagne. The Pinot Meunier from Villedommange completes the blend imparting a roundness and suppleness.

  A swirl of very fine bubbles is reflected in a creamy style of Champagne with developed biscuity notes from extended ageing on the lees and a lovely long and savoury finish. This wine is full of charm.

  This cuvée was bottle aged for a minimum of four years in the historic limestone cellars which are centuries old.

  An assemblage of six Chardonnay parcels from the best Premiers and Grands Crus of the Champagne region.  The three pillars of this Blanc de Blancs Premier Cru come from the three famous Grands Crus of Champagne – Avize, Oger and Chouilly. Avize is a rich Cru which brings power; Oger offers tenderness and Chouilly imparts elegance and finesse to the blend. These limestone soil Crus naturally present iodised notes and citrus aromas. The assemblage is balanced by blending Chardonnay from Villers-Marmery, a very mineral Cru with smoky notes making the wine round and light, while fruit from the Crus of Vaudemange and Trépail complete the assemblage.

  Vivacious, with a light texture this 1er Cru delivers citrus notes of Sicilian lemon and lime, with hints of lemon tart on puff pastry. Nuances of white pepper, liquorice and smoke add to the kaleidoscope of flavours. This is fresh, taut, complex and full of finesse with a beautifully long finish.

  The Blanc de Blancs 1er Cru was aged for a minimum of five years in Collet’s centuries-old limestone cellars.

To celebrate its centenary, Champagne Collet has made a commemorative bottling called “Cuvée n°21”. It is a blend of 21 of the Champagne House’s best years dating back to 1961. Aged for 7 years in Collet’s century-old chalk cellars, this wine is exclusively sourced from the Grand Cru and Premier Cru villages of Cramant, Ambonnay, Mailly, Avize, Hautvillers, Villers Marmery, Vertus, Verzenay and Chouilly. This one-of-a-kind Champagne was made in very limited quantity and will never be seen again.

  Disgorged and blended in 2021 this rare Champagne is comprised of the 21 best vintage which includes: 1961, 1969 1971, 1979, 1980, 1981, 1982, 1985, 1986, 1988, 1989, 1991, 1993, 1995, 1996, 1999, 2002, 2004, 2006, 2008, & 2012.
