    Renan Cancino is one of Chile’s most sought-after viticulturists, and while he has made his name for tending vines, his wine production under the Huaso de Sauza brand is also turning heads. Cancino is a natural winemaker whose philosophy is making wines how they were always made historically in Chile – naked. Everything is done the traditional way here: vines are worked by hand, the vineyards are worked by draft horse, and there has never been any use of irrigation or chemicals.

    Cariñena is made from Carignan grafted onto free-standing País rootstock on granitic soils in the town of Sauzal.  Cariñena is a rustic wine with expressive aromas of violet, rose petal, oak, smoke and mushroom.  The palate is brimming with flavours of cherry, strawberry, raspberry, liquorice and anise.   The finish is mouthwatering, like a mountain breeze!

    “I have never seen such an artisanal and true to tradition way of making wines. The nose is a clean, focused and pure expression of the grape, with the violets and earthy, slightly rustic aromas. No sulfur is ever used at the winery, yet the wines are so clean and pure that it’s hard to believe. The palate is medium-bodied with some earthy, slightly grainy tannins and with great acidity.     In the glass, it displays ripe dark and red cherry fruits, spice and leather with a hint of smoky oak.  On the palate, it is full-bodied with round, mouth-filling flavours of plum, brambly fruit, dark cherry and savoury herbs.  The oak integrates nicely with the fruit and silky tannins.   Drink now to 2029.  This wine is great with venison, duck, roasted beetroot, rare lamb and wild mushrooms.

    A fruit-driven style of Pinotage, with a generous array of red cherry, violet, grenadine and strawberry underpinned by freshly picked black plum, graphite, black olives and spice. Elegant and smooth with a stony freshness and a satisfying, satin-textured finish.

    The grapes come from the Bottelary Hills ward of Stellenbosch, in the Western Cape. The westerly facing vineyard is located at 300 metres’ elevation and is planted on granite and sandstone soils which offer free-draining properties. The climate is generally hot and dry; however maritime influences from False Bay to the south provide moderating sea-breezes, which help to keep the vineyards healthy and impart balancing freshness to the grapes. Pinotage, South Africa’s signature grape variety, is a crossing between Pinot Noir and Cinsault, (the latter was previously known as Hermitage in South Africa) from which it takes its name.

This is the latest release of their Crianza.  It’s made from 100% Tempranillo, grown in their own vineyards, and is aged for 18 months in oak prior to bottling. On the nose the aromas are of blackberries and plums with spicy hints and a touch of vanilla creaminess while the palate shows delicious ripe raspberry and cherry fruit flavours. There’s plenty of power here which, coupled with the rounded tannins, give it a nicely sleek and silky feel in the lead up to a subtly spicy finish.

    The ‘Superheroe’ from Xosé Lois Sebio is a layered fragrant blend highlighting notes of violet, blackberry, redcurrant and plums, combined with subtle hints of black pepper and mineral tones. Elegant and expansive on the palate, offering concentrated fruit, fine tannins with a balancing freshness. The rich yet vibrant finish is wonderfully intense and long.

    This wine is from the DO Ribeiro, which means ‘River Bank’ in Galician, as it is located along the Miño river and its tributaries, in Galicia, North West Spain. A blend of indigenous varieties, the vines range from 40 to 70 years old. These vines are low yielding and produce small, concentrated, flavoursome berries. Planted at an altitude of 150 to 350 metres above sea-level, the vines are free-standing and trained with a stake in the traditional manner, at a density of 1.25 x 1.25 metres. The soils are clay with schist, the latter imparting mineral tones to the wine. The 35% of ‘other grapes’ in the blend is a field blend of Ferrol, Souson, Brancellao, Bastardo, Caiño Longo, Caiño da Terra, Carabuñeira and Tinta Marela. The grapes are grown mixed together in the same parcel which was planted between 70 to 90 years ago in the traditional manner at the time. The grapes are manually harvested simultaneously with each variety offering a unique characteristic to the blend.

    Le P’tit Paysan Cabernet Sauvignon offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.

    Cabernet Sauvignon is sourced from two vineyards, a 44-year-old vineyard planted in the calcareous alluvial deposits of the San Benito River and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot from the Paicines AVA and grows in rocky alluvial deposits above the Tres Pinos arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late-ripening Bordeaux varieties to be picked at high acidity and moderate sugars. Fermented whole berry in several lots with endemic yeasts, pressed after approximately 20 days. Aged for 11 months (3% new) French barrels. Pairs well with steak, duck, game, hearty stews, ribs, and dark, rich sauces.  Drink now to 2035

And the name of the wine, like the blend, is a composite of the grapes that go into it: AMA from the amaro in Negroamaro and TIVO from Primitivo.

    An “international-style” wine created by blending two native grapes from Puglia, the flavour profile of this cuvée gets its earthiness from the Negroamaro and its rich fruit character from the Primitivo. While the Negroamaro imparts freshness and just the right amount of tannic structure, the Primitivo gives the wine balance through its rich red fruit flavour.

The soils comprise 30% clay and limestone, and 70% decomposed granite, which retains the heat from the day and promotes a long slow ripening period for the grapes.

    A beautiful balancing act of crisp, inviting acidity, pure varietal fruit flavour and character, Querciabella Chianti Classico represents the pinnacle of high-altitude, perfectly exposed Sangiovese fruit.  Its complexity and consistency derive from sourcing the grapes from top sites across the Classico region.

    Each vineyard is cared for on a lot by lot basis to respect the essence of each site. The same focus and precision in the cellar, allow for natural winemaking with minimal intervention, that preserves the purity of the fruit. After about 14 months in fine-grained oak barrels, and regular racking, only the best lots make it to the final blend. Once bottled, the wine rests patiently for a few more months before release. This patient maturation adds a layer of softness and enhances the varietal fruit notes typical of quality Sangiovese.

    Sangiovese practically screams for anything with tomato sauce and the natural pairing with Tuscan regional food is, of course, Pappa al Pomodoro. A heartier option is to pair this full-bodied wine with a dish that can stand up to its great structure and complexity like Spaghetti Bolognese.
