    2022 Rebula, Edi Simcic

    £2995

Edi Simčič, one of Slovenia’s most revered family-run estates, has built an international following for producing elegant, terroir-driven wines from the rolling hills of Goriška Brda, a region often dubbed the “Tuscany of Slovenia.” Their focus on low yields, meticulous vineyard practices, and minimal intervention winemaking results in wines of depth, complexity, and authentic expression.

In the glass, the 2022 Rebula opens with vibrant aromas of lemon zest, grapefruit, green apple, and hints of lychee and white peach. The palate is crisp and focused, marked by lively acidity and a long, saline finish underscored by stony minerality. There is a subtle depth with layers of tropical fruit and citrus framed by a clean, linear structure that speaks to careful vineyard management and thoughtful cellar work.

Rebula, also known as Ribolla Gialla in neighbouring Italy, is an ancient white grape variety believed to have originated in the borderlands of present-day Slovenia and northeastern Italy. It thrives in the Goriška Brda region of Slovenia, an area characterised by steep hillsides, marl-rich soils, and a unique microclimate influenced by both the Alps and the Adriatic Sea. Rebula is known for its high acidity, transparency to terroir, and capacity to express a wide range of styles, from fresh, zesty whites to complex, skin-contact or barrel-aged interpretations.

    £2995

Widely considered to be one of the best producers in Slovenia, Edi Simčič’s wines are truly unique, stoically traditional and proudly Slovenian.  A family-run estate, now in its third generation, which has been crafting wines that reflect the unique terroir of their vineyards in Vipolže, Kozana, and Fojana since 1989. With a commitment to low yields and meticulous grape selection, the Simčič family emphasises quality and authenticity in every bottle.

The 2022 Malvasia (Malvazija) is a compelling expression of Slovenia’s Goriška Brda region, where the Mediterranean climate meets Alpine freshness.  In the glass, the wine is intensely aromatic, featuring notes of dried and fresh peaches, apricots, and balsamic hints.  On the palate, it is dry and robust, showcasing the distinct character of dried apricots, complemented by a mineral undertone and a lingering, salty finish. This Malvazija not only highlights the varietal’s characteristics but also embodies the stylistic nuances that define the Edi Simčič winery.

2022 Chablis, Michel Laroche et Ses Enfants, Le Domaine d”Henri

    £3000

Laroche is a famous name in Chablis, with family history dating as far back as 1695. Michel Laroche is the patriarch of the family and after decades as the director of Domaine Laroche he decided in 2010 to sell his stake in this business, keeping the historic vineyards that he had inherited, and created a family domaine with his children Margaux and Romain and his wife Cécile, that would be called Le Domaine d’Henri, in homage to his father.

The Chablis region is renowned for its Kimmeridgian marl, a limestone-rich clay formed over 160 million years ago from fossilized marine deposits. This unique soil imparts a distinct minerality and sharp edge to Chablis wines.

The wine expresses flint, herbal notes and citrus in the nose, classic traits of Chablis. Bright crisp acidity provides tension and backbone to the ripe flavors of melon, pear and almonds. Wonderfully versatile with food, this wine is as serious or playful as you would like.

2022 Pet Nat 8.21 Blanc de Blancs, Le Domaine d’Henri

    £3100

    The Unexpected Spark from Chablis.

Elegant yet joyfully alive, the 2022 Pét Nat 8.21 Blanc de Blancs turns tradition on its head with Burgundian poise. Made from 35-year-old Chardonnay vines in Chablis, it’s crafted by the Méthode Ancestrale,  the original sparkling method, where fermentation finishes naturally in the bottle, trapping its own delicate bubbles. After 36 months ageing on lees and disgorgement with no added sugar, the result is a wine of remarkable finesse and purity. The nose unfurls with toasted brioche, citrus zest and a touch of tropical fruit, while the palate balances crystalline minerality with creamy texture and a fine, persistent bead. It’s both playful and profound – a sparkling wine that feels genuinely born of its terroir.

For when: you want bubbles with character, not choreography.
Pairs with: oysters, sashimi, or just a moment worth savouring.
If this wine were a person, it’d be the effortlessly chic Parisian who brings the sparkle to every table.

Le Domaine d’Henri, founded by Michel Laroche and his family after his departure from Domaine Laroche, is a return to roots, small, focused, and deeply connected to the land of Chablis. Based in Maligny, the estate farms old-vine Chardonnay from premier sites, following sustainable viticulture and minimal-intervention practices to let the vineyards speak clearly.

The 8.21 Blanc de Blancs embodies Michel’s restless curiosity and respect for innovation grounded in tradition. The name “8.21” signifies the 821 days from budburst to release, a meticulous process reflecting patience and precision. This is Chablis reimagined: mineral, detailed, and alive with energy – proof that even the most classic terroir still has a few delightful surprises up its sleeve.

    2022 Local Growers Semillon, Rockford

    £3300

Rockford Wines is one of Australia’s most cherished small producers, celebrated for its steadfast commitment to traditional winemaking techniques and the preservation of Barossa Valley’s rich viticultural heritage. Based in a heritage-listed stone winery in Krondorf, Rockford sources fruit from a trusted network of local growers, many of whom have worked with the winery for decades.

The Local Growers Semillon is a tribute to these longstanding partnerships and the Semillon grape itself, a historically significant but increasingly rare variety in the Barossa. While Semillon is often overlooked in favour of more fashionable whites, Rockford embraces its heritage, producing a wine of quiet confidence and superb ageing potential. Fruit is often picked early to preserve acidity and clarity, then vinified with a light touch to retain varietal expression and texture.

In the glass, it is fresh, focused, and unmistakably Barossan.  It opens with lifted aromas of lemon blossom, green apple, lime zest, and a hint of beeswax. The palate is dry, crisp, and beautifully structured with flavours of citrus peel, white peach, and subtle herb notes that glide across a fine, chalky texture. A vibrant line of acidity adds drive and precision, finishing clean, savoury, and refreshingly long.
