    Winemaker David Depuydt makes Chablis as it should be; mineral, fresh and light but with interest and texture. Think flavours of lemon, pea shoot and green apple, it’s got racy acidity but not a hint of bitterness. Aromatic and vibrant, with ample stone fruit, rounded and supple with that essential clean, mineral freshness. Pairs well with pork, rich fish (salmon, tuna etc), shellfish, mild and soft cheese.

    The area of Lussac is an up and coming satellite appellation of the renowned Saint Emilion region on the the Right Bank of Bordeaux. There is no doubt that one of Lussac’s most prized properties is Château Lucas, owned by the Vauthier family of Château Ausone fame. From just 18 hectares of vines, three cuvée are produced. The top wine, aptly called Château Lucas, is produced from a 12-hectare vineyard, comprising equal parts Merlot and Cabernet Franc. While so much of the Right Bank focuses on Merlot, the high percentage of Cabernet Franc brings a polished lift to the cuvée, vintage in and vintage out.

    In the glass it opens with aromatics of raspberry and blackcurrant interlaced with plum and vanilla notes.  The palate is round and balanced with flavours of earthy spices, tobacco and blackcurrants that lead into a sustained finish.

    The grapes for the Amfòra cuvée come from vineyards between the Mediterranean Sea and the mountainous foothills. The Mediterranean climate, with its warm, dry summers and relatively mild winters, offers the vines excellent conditions in which to flourish. The high number of sunshine hours results in wines that are powerful, rich and aromatic, but also fresh due to the tempering effects of the Mediterranean Sea. The soils are made up mostly of clay-limestone and basaltic soil; the latter is a volcanic soil formed from ancient lava, which contains high proportions of iron and imparts a distinctive minerality to the wine. The vineyard is certified organic and HVE Level 3 certified for sustainability. The vines are surrounded by hedges to protect them from pesticide treatments in the neighbouring fields and also to provide a refuge for the wildlife, enhancing biodiversity. Harvested in the cool of the night to retain freshness and at high ripeness levels to avoid any green flavours or bitterness.

    The Domaine Gardiés vineyards nestle in the foothills of Corbières, where the clay- limestone of the scrubland gives this a part of the Domaine’s soil its characteristic finesse. The climate is Mediterranean, the hot, arid summers encouraging the vines to struggle and send their roots deep into the soil in search of nutrients, resulting in complex wines. The low-yielding vines produce 30 hl/ha. The region is characterised by the eight different types of wind blow across the wine growing area and, one day out of three, the mighty Tramontane, a dominating northerly wind, sweeps through the region. These drying winds help keep vineyards in a healthy condition, reducing the need for pest control or other human intervention. Domaine Gardiés is certified organic, the vines are hand-harvested and biodiversity in the vineyard is encouraged.
