  2015 ‘Salvaxe’, Xosé Lois Sebio

  Salvaxe is a wine which is made with minimal intervention in the vineyard and the cellar, a blend of native numerous old vine native Galician grapes it has intense ripe fruit aromas combined with floral, spicy and mineral notes.  Beautifully balanced with a fresh yet textured palate and elegant fruit flavours on the long, persistent finish.   2015 was an almost perfect vintage and the grapes were harvested in perfect health and the resulting wines are capable of great ageing.  Drink now to 2030.

  The vineyards for Salvaxe are situated in the village of Gomariz, in the heart of the Ribeiro DO in North-Western Spain. Consisting of several indigenous varieties to Galicia including Lado and Treixadura, the vines vary in age from 60 to 90 years and are planted at a density of 4,000 to 7,000 vines per hectare. These old vines are low yielding, with deep root systems that impart complex flavours. The vineyards sit at an altitude of 180 to 250 metres and the soils are a mix of clay and schist.

  2021 The Florita Riesling, Jim Barry

  Jim Barry’s iconic and outstanding single-vineyard Riesling, The Florita, stands tall at the top of the tree for Clare Valley Riesling.

  Located fifteen kilometres south of Clare township in the tiny village of Watervale, Florita – Spanish for ‘little flower’ – comes from a famous Riesling vineyard planted to Palamino in 1946 for making Fino Sherry but was replanted to Riesling in 1962. This was the birthplace of Leo Buring Watervale Riesling and the Florita vineyards, where legendary winemaker John Vickery sourced his grapes for his great Watervale Rieslings of the 1960s and 1970s.

  The 80-acre vineyard was bought by Mark, Peter and John Barry in 1986. First released as the ‘Florita Riesling’ in 2004 by Jim Barry Wines, this micro-batch Riesling is made from grapes hand-selected from individual rows. Its best fruit comes from vines planted in shallow loamy soils and the vineyard has good air-drainage which alleviates the risk of frost. A wine with a reputation second to none for consistency and a true benchmark wine.

  The 2021 is a simply astonishing incarnation that Riesling lovers would be remiss to not have in their cellar. Drink 2027 – 2050 +

  2019 ‘L’Ove Blanc’, Château de l’Ou

  Fine, elegant aromas of apricot, crushed citrus notes and a touch of salted almond give way to a beautifully balanced palate with a lovely mineral attack and the full elegance of white fruits on the finish

  The Grenache Gris grapes come from the Côtes Catalans, which is the principle IGP allowing only monovarietal wines. The vines thrive at an altitude of 350 metres’ elevation in the Maury terroir, located in the northern part of the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees which balance the hot, arid summers. The soils are made up of alluvial marls of the Roussillon plain, along with black schist; the latter imparts great aromatic complexity to the wines, characterised by freshness and notes of the garrigue. The vineyard is certified organic.

  2020 ‘Infiniment de ‘l’Ou’, Château de l’Ou

  This vibrant Chardonnay is characterised by great minerality, layered with bright citrus
  notes, floral hints and toasted nuts through to a vibrant, saline finish.

  The Chardonnay grapes come from the Côtes Catalans, which is the principle IGP allowing only mono-varietal wines. The vines thrive at an altitude of 385 metres’ elevation in the Haute Vallée de l’Agly, in the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain-freshness from the foothills of the Pyrenees which balance the hot, arid summers. The terroir is made up of a mosaic of black schist soils, which date back to the Cretaceous period. The schistous marl produces shallow soils, which force the vines to send their roots deep in search of water and nutrients. The vineyard is certified
  organic.

  2022 Chablis 1er Cru Mont de Milieu, Domaine Jean Goulley

  A full-flavoured and complex Premier Cru Chablis, delivering rich, ripe fruit enveloped in a creamy texture through to a long, sustained finish.

  Mont de Milieu is a 1er Cru vineyard site located on the eastern banks of the Serein River and produces age-worthy wines from this exceptional terroir. The vines are planted in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. Domaine Goulley’s old Chardonnay vines were planted in 1968 and were converted to organic status in 2005, since then it has been cultivated without the use of chemical treatments.

  The vineyard has a south to southwestern exposure and sits at 150 to 190 metres elevation which encourages good diurnal temperature differences, encouraging the grapes to accumulate good fruit concentration while retaining refreshing natural acidity from the cooler nights.

  2020 Block 6 Chardonnay, Hay Shed Hill

  Hay Shed Hill is one of a small and prestigious group of pioneer vineyards that have established Margaret River’s reputation as a world-class wine producing region.

  Located in the heart of the Wilyabrup Valley, the premier sub-region of Margaret River, The Hay Shed Hill Block Series wines are made from small parcels of fruit from individual blocks on the vineyard to showcase the best of Hay Shed Hill.

  In the glass the wine has mineral aromatics with background savoury flinty notes. The fruit is in the fresh white pear spectrum with perhaps some citric elements. The palate is vibrant and light. The old vine depth of fruit provides a complexity not seen in most Chardonnay – there is always more to find in the wine without it being overworked or over-blown. This is a beautiful wine with depth of flavour and texture that will stand up in a fine dining situation.

  The 2020 Montmains has an intense mineral nose followed by fresh vibrant fruit, crisp acidity and citrus notes. Beautifully balanced, this is pure and round on the palate, with a creamy texture and a long, salivating finish. Classic Chablis.

  The 1er Cru of Montmains is one of the best known Premier Cru vineyards and stretches along an exposed hillside to the southwest of the town of Chablis. It is angled slightly east toward the morning sun, the slopes of the vineyard have enough sunshine to ripen grapes, while still retaining the fresh acidity that is so important to Chablis wines. Montmains is known for producing fresh, elegant wines with good minerality.

  2022 Sancerre Cuvee Silex, Domaine Serge Laloue

  Serge Laloue has always been one of our favourite winemakers in the Loire, making incredible Sancerre. This we think is their finest Cuvee, crafted by Franck Laloue the Sancerre Silex has intense aromas of smoky graphite with mineral notes of oyster shell that are complemented by zesty orange peel and Mirabelle plum. This fresh, supple cuvée delivers concentrated citrus flavours through to a bright and uplifting mineral finish.

  The grapes come from a three-hectare estate vineyard, where the vines have an average age of 40 years, producing low yields of concentrated fruit. The vines face a south-easterly orientation, maximising exposure to the sun to assist ripening of the berries. The soils are ‘silex’, a flinty clay that produces elegant wines with distinctive graphite and mineral characters. The vineyard is currently in conversion to organic status, a natural progression for the Laloue family as the farming methods used over many years have followed these principles. Vineyard management techniques include ploughing the soil instead of using herbicides, growing cover crops between the rows of vines and sexual confusion of predators, to maintain the health of the vines and the biodiversity of the environment.

  2017 Chenin Blanc, Illimis

  This is a worthy successor to the heralded 2016 vintage of this wine. Vibrant, textured with notes of spice and crunchy apple. Oatmeal and citrus flavours come to the fore leading to a poised and pure finish.

  Interesting fact:- The vineyard in cool-climate Elgin region of the Western Cape is 300m above sea level on bokkeveld shale soils. We say soil – more just vines growing out of huge chunks of rock!

  The Penisula range of wines from Paringa estate is the first tier of the estate’s wines and are designed (and do!) to over deliver in quality for the price you pay.   Classic Mornington Peninsula characters of grapefruit with vanilla and ripe peach are present and because of the nine years of age, the texture and richness of the wine has deepened whilst still retaining amazing freshness on the minerally finish.   A cracker and we have done the maturing for you!

  2012 Columbia Valley Chardonnay, L’Ecole No.41

  Aromas of butter and toast are joined by mango, poached pear and Spanish almonds. The wine underwent surlie aging and was stirred for six months, which accounts for the rich entry and buttery mid-palate, but there’s not as much of the oak flavours that were hinted at in the nose. Instead, the theme is carried by apricot and sweet pear with a bite of Golden Delicious apple in the finish.

  2021 Chardonnay ‘Reserve Selection’, Raymond Vineyards

  Steeped in rich family history, Raymond vineyards can trace it’s origins in winemaking back to the days of the ‘old’ Napa Valley.   Founded in 1970, Raymond vineyards produce high-quality Cabernet Sauvignon and Chardonnay

  This 2020 Chardonnay ‘Reserve Selection’ has fragrant aromas of tropical and stone fruits that lead to notes of honeysuckle, accentuated by a touch of toasted almonds. This is a beautifully balanced wine with bright acidity and a creamy texture with a hint of minerality on the finish.

  The grapes come from the estate vineyards in Jameson Canyon and selected Napa Valley growers. The estate vineyards are planted on rolling hills at the southern end of Napa Valley. The growing conditions in the Jameson Canyon are very similar to Carneros, the neighbouring appellation just west of the Napa River. Winds flow through Jameson Canyon, bringing the cooling influence of the nearby Pacific Ocean and providing a long, cool growing season which enhances and concentrates the intensity of the varietal characteristics. A proportion of grapes are harvested from vineyards in Carneros and the Napa Valley which lend more texture and structure to the blend.

  2021 Wild Ferment Assyrtiko, Gaia

  This is probably the best Assyrtiko made in Greece and therefore anywhere!  A highly complex, aromatic nose and funky nose, with citrus notes combining with floral hints from the acacia wood, vanilla, toasty oak and a touch of smoke. The layers of wild ferment envelop this precise and dry wine which has a mineral and salty complexity to the tangy finish. This is a truly unique wine.

  The Assyrtiko vineyard is located in Santorini and the terroir is recognised worldwide for its tremendous historical roots, as the vineyards in this area date back 3,000 years. The low-yielding, 80-year-old, self rooted vines are grown in soils that are poor in organic matter. The high sand content has ensured they have never been affected by phylloxera. The soils are also volcanic: porous with a high mineral content, which imparts the mineral quality to the wine. The long sunshine hours, lack of rainfall, sea mists and strong summer winds all contribute to the unique microclimate. The surrounding Aegean Sea acts as a “climatic buffer” that softens the climate, so the extreme conditions are reduced. The vines are trained on traditional basket-shaped systems called “kouloura”.

  2021 Chardonnay, Black Stallion

  The Black Stallion Estate Winery Chardonnay opens with aromas of yellow apple, crème brûlée and hints of apricot, pear and oak. The flavors are tantalizing notes of citrus, dried apricot, and pineapple. The Chardonnay from Los Carneros provides the bright acidity, citrus notes, and lean backbone of the wine, and the Chardonnay from the warmer growing regions contributes riper, fuller-bodied character. Vanilla aromatics from oak and floral perfume from the fruit precede ripe fruit flavors balanced with bright acidity and a rich mid-palate weight creating a multi-layered, complex wine with a lingering finish. Sip this wine on its own or pair alongside aged cheeses, fresh salad, shellfish or grilled seafood.
