The Delaire Graff Chenin Blanc Swartland Reserve is made from 100% estate-grown Chenin Blanc grapes. Barrel fermented and matured in oak for 10 months this wine is a light golden wheat colour. The vineyard is located on the slopes of the Olifantsberg Mountain Range where it endures wide diurnal temperature differences and strong winds. The grapes for this wine are from 100% bush vines grown on soils with a high percentage of shale and quartz. This is the rockiest vineyard on the farm and is planted at 350 metres above sea level. The vines are densely planted and endure a very dry and tough micro climate due to the high amount of rocks in the soil. The combination of rocky soils and high density planting, results in competition between the vines and in turn deeper root systems. The deep root systems enable the vine to develop a good buffer during drought conditions. The rocky soils also add more stress, so the vines deliver very small berries with a concentrated fruit, good body and fresh acidity.

This Sauvignon Blanc from Groot Constantia is consistently one of South Africa’s best and is highly awarded every year – indeed the 2019 vintage was named the Worlds Best Sauvignon Blanc at the 2020 International Wine Challenge. The 2020 vintage has a very similar flavour profile and is another triumph from Groot Constantia.
The wine shows great complexity on the nose, dominated by ripe fruit like white peach, passion fruit and guava with a distinct grassy, herbal undertone and a hint of lemon. The palate has intensity and length, balanced by fresh natural acidity.
The vineyards for this wine are located on the eastern side of Table Mountain with a climate that is best described as Mediterranean – this coupled with cooling breezes from the Atlantic Ocean encourages balance and complexity in the grapes. The grapes for this exceptional wine come from a 0.6-hectare vineyard located on the fertile slopes of the Olifantsberg Mountain Range where they endure large diurnal temperature differences and strong winds, at altitudes from 250 to 450 metres above sea level. During the winter the mountain peaks are snow-covered, keeping the vines dormant for longer. Strong, constant winds characterise this block; they have a cooling effect and encourage a slow, gradual ripening of the grapes, helping to maintain healthy vines and contribute freshness and elegance to the wines. The soil in the vineyard is made up of sandstone with clay-shale and quartz. The vineyard is farmed in a sustainable manner, with only ‘green’ products used to prevent disease, thus helping to maintain the biodiversity within the vineyards and soils.
The lark is found in many biomes in South Africa, each with distinct call and features depending on the biome. This wine is named after the Red Capped Lark which is found on the Olifantsberg farm. The lark resonates with this block of Chenin Blanc, as it too has its own expression and story to tell.

The soil is made up of decomposed sandstone with some granitic conglomerate stones, known as ‘Koffieklip’. This iron-ferrite rich soil produces wines with more minerality and intensity.

This 2017 Sauvignon Blanc, Semillon is a classic white Bordeaux-style wine. Light lotus yellow-green in colour, the nose has pristine aromas of elderflower, lemon and mandarin segments. A clean, seamless palate with vibrant fruit definition balanced with a taut natural acidity, this linear structured wine unfurls to lime, rose and pear softened by a creamy texture and lingers long after the first sip.
Its fresh, citrus profile and mineral texture make it perfect with seafood dishes, fish and spring vegetables. Winemaker Richard enjoys it with tuna sashimi with a delicate lime and ginger or Asian dipping sauce. Oysters; asparagus and peas in a pasta primavera work well or goats cheese, white asparagus and chorizo (lightly spiced) pizza. Alternatively, a ‘posh’ fie pie or poached salmon with peas and frothy hollandaise, Cod and chips, or beer-battered haddock. For meat lovers, Gammon on the bone with broad beans in a parsley sauce.
