The grapes come from the AOP Côtes de Roussillon, where the vineyards are located within a natural amphitheatre open to the Mediterranean Sea, and surrounded by mountain ranges. The vines are grown on the Roussillon plains where the soils are made up of alluvial marls. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees which offer balance to the hot, arid summers. The vineyard is certified organic.

The Domaine Gardiés vineyards nestle in the foothills of Corbières, where the clay- limestone of the scrubland gives this a part of the Domaine’s soil its characteristic finesse. The climate is Mediterranean, the hot, arid summers encouraging the vines to struggle and send their roots deep into the soil in search of nutrients, resulting in complex wines. The low-yielding vines produce 30 hl/ha. The region is characterised by the eight different types of wind blow across the wine growing area and, one day out of three, the mighty Tramontane, a dominating northerly wind, sweeps through the region. These drying winds help keep vineyards in a healthy condition, reducing the need for pest control or other human intervention. Domaine Gardiés is certified organic, the vines are hand-harvested and biodiversity in the vineyard is encouraged.
White WineA floral and aromatic Chardonnay with white peach flavours complemented by nutty, toasty tones and a lovely creamy texture. Fresh and light with mineral overtones through to an elegant finish.
The Chardonnay vines thrive in climatic conditions similar to those of Burgundy; the vineyard experiences an oceanic climate with continental influences, frequent rain fall and wide temperature ranges. The vines are planted at a density of between 5,000 to 6,000 vines per hectare, which produce concentrated wines. The vines are trellised using espaliers to ensure optimal sunlight exposure, allowing the grapes to ripen evenly. Pruning, de-budding and thinning out of the leaves are all conducted manually and to environmentally-friendly specifications. The grapes are harvested by hand and are transported to the cellar in special bins to preserve the quality of the fruit. The vines are grown in compliance with the rules of sustainable agriculture set by Terra Vitis.
White WineDomaine Gauby is located close to the small town of Calce in the Roussillon. Now run by Gérard Gauby, his wife Ghislaine and their son Lionel, who is responsible for the winemaking, the domaine has gained a reputation for making wines of exemplary freshness in a hot climate.
This 2020 `Calcinaires` Blanc has a fresh nose with delicate aromas of white flowers and notes of peach and quince. The palate is expressive with layers of citrus and stone fruit. A bright acidity is underpinned by a long mineral finish.
This blend of 40% Grenache Blanc, 30% Chardonnay, 20% Macabeu, and 10% Vermentino is sourced from a mixture of old and young vines planted on clay loam and limestone. The Chardonnay vines are average 45 years old and the Macabeu 80 years old, which gives the grapes great concentration. The Roussillon has incredibly diverse soils which, combined with the multiple aspects from the rolling hills, has given Gérard Gauby the freedom to experiment and maximise the potential of each grape variety.

In the glass, this 2019 Petit Chablis is vivacious with aromas of peach, apricot and ripe nectarine. The palate is crisp and mineral with the aromas translating to the palate flavour. The finish is the typical of the Goulley style – mouthwatering.

The vineyard is situated on the left bank of the River Sereine, where the vines are planted with an easterly orientation at an average altitude of 210 metres. The double Guyot trained vines are between 25 to 30 years old and are grown in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. There is also the presence of Cailloux, large pebbles which help to promote ripening by absorbing the heat of the day and then radiating it at night. The vines are planted to a density of 5,700 vines per hectare and yields are kept to a maximum of 60 hectolitres per hectare. At Domaine Jean Goulley, they believe in highlighting terroir and produce their wines in an unoaked style, allowing them to reveal the purity, minerality and vitality of the soil.

White WineIn the glass, the Organic Bourgogne Hautes Côtes de Nuits is straw yellow with white highlights. It has very intense bouquet perfumes with notes of citrus zest, green apple and toasty aromas of fresh brioche. The palate has excellent tension with concentrated fruit flavours that linger on the finish.
The Hautes Côte de Nuits vineyards run parallel to those of the Côte de Nuits but are situated at a higher altitude. This wine comes from 1.05ha of organically certified Chardonnay vines. They are 35 years old on average and are planted at a density of 3,500 vines per hectare. The vineyard is east-facing and planted on limestone soil, which gives the resulting wine great freshness and fine minerality.
White WineSerge Laloue has always been one of our favourite winemakers in the Loire, making incredible Sancerre. His ‘Les Poitevinnes’ Cuvee is an elegant and complex expression of Sancerre, with concentrated Mirabelle plum and peach underpinned by delicate hints of liquorice, anise and mineral notes. The lovely rounded texture on the palate is beautifully framed by mineral freshness.
The grapes are grown in 0.55 hectares of vineyard within the estate, from vines with an average age of 30 to 35 years. The vines face a south-easterly orientation, maximising exposure to the sun to assist the ripening of the berries. The soils are predominantly calcareous clay, which typically has a high limestone content, producing elegant and textured wines with distinctive minerality. The vineyard is currently in conversion to organic status, a natural progression for the Laloue family as the farming methods used over many years have followed these principles. Vineyard management techniques include ploughing the soil instead of using herbicides, growing cover crops between the rows of vines and sexual confusion of predators, to maintain the health of the vines and the biodiversity of the environment.

The vines thrive at an altitude of 350 metres’ elevation in the Maury terroir, located in the northern part of the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees which balance the hot, arid summers. The soils are made up of alluvial marls of the Roussillon plain, along with black schist; the latter imparts great aromatic complexity to the wines, characterised by freshness and notes of the garrigue. The vineyard is certified organic.

The Chardonnay grapes come from the Côtes Catalans, which is the principle IGP allowing only mono-varietal wines. The vines thrive at an altitude of 385 metres’ elevation in the Haute Vallée de l’Agly, in the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain-freshness from the foothills of the Pyrenees which balance the hot, arid summers. The terroir is made up of a mosaic of black schist soils, which date back to the Cretaceous period. The schistous marl produces shallow soils, which force the vines to send their roots deep in search of water and nutrients. The vineyard is certified
organic.
White WineA full-flavoured and complex Premier Cru Chablis, delivering rich, ripe fruit enveloped in a creamy texture through to a long, sustained finish.
Mont de Milieu is a 1er Cru vineyard site located on the eastern banks of the Serein River and produces age-worthy wines from this exceptional terroir. The vines are planted in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. Domaine Goulley’s old Chardonnay vines were planted in 1968 and were converted to organic status in 2005, since then it has been cultivated without the use of chemical treatments.
The vineyard has a south to southwestern exposure and sits at 150 to 190 metres elevation which encourages good diurnal temperature differences, encouraging the grapes to accumulate good fruit concentration while retaining refreshing natural acidity from the cooler nights.
White WineThe 2020 Montmains has an intense mineral nose followed by fresh vibrant fruit, crisp acidity and citrus notes. Beautifully balanced, this is pure and round on the palate, with a creamy texture and a long, salivating finish. Classic Chablis.
The 1er Cru of Montmains is one of the best known Premier Cru vineyards and stretches along an exposed hillside to the southwest of the town of Chablis. It is angled slightly east toward the morning sun, the slopes of the vineyard have enough sunshine to ripen grapes, while still retaining the fresh acidity that is so important to Chablis wines. Montmains is known for producing fresh, elegant wines with good minerality.
