In the soil, which is calcareous clayey and poor in organic matter, the use of chemical products is avoided and biodynamic preparations are used.   In the winery, the grapes are destemmed but not pressed. Once they arrive, they undergo spontaneous fermentation with native yeasts. After pressing the juice is then decanted into barrels to rest on its lees for approximately 10 months.

These cooling and humid influences descend at night, creating diurnal temperature differences of 15°C which extend the ripening period; with the warm days concentrating the flavours in the grapes, while balancing natural acidity is retained during the cool nights.
