    At Ktima Gerovassiliou, the single, private vineyard is cultivated with great care and enthusiasm, which leads to constant research and experimentation with Greek and international varieties. New technological advances blend well with tradition throughout the vine growing and vinification processes to produce high-quality wines that carry all the distinct characteristics of the terroir of Epanomi. The climate is Mediterranean with mild winters and hot summers, tempered by sea breezes. The vineyard is surrounded on three sides by the sea, which is three kilometres away, while its west side faces the Thermaic Gulf, Mount Olympus and the beaches of Pieria. The vines are grown in soils that are mainly sandy with a few clayey substrates and calcareous rocks. It is rich in sea fossils, as the surrounding hilly area was formed by sea deposits.

    Wallace takes on the traditional Barossa Valley blend of Shiraz and Grenache in a modern way. The Shiraz brings backbone, flesh and body to the wine with the Grenache adding a soft, vibrant juiciness.

    Wallace is made from exceptional old vine fruit was sourced from the famed Ebenezer sub district at the northern tip of the Barossa Valley. Vine ages are 50—80 years old for the Shiraz and 50—100 years old for the Grenache.

    In the glass, the wine has lifted aromas of bright red fruits with fresh spice notes of star anise and cedar.  The palate has bright red berry fruit, redcurrant and liquorice flavours that complement the soft and rounded Grenache fruit tannin and the savoury finish of Shiraz. Lovely refreshing acidity provides both lift and depth.

    Peak Drinking: A wine to enjoy in its youth that will also develop additional complexity for up to 8—10 years of cellaring.

    Wallace is an ancestral name of Colin’s wife, Judith, whose family hail from the old market town of Cupar in Fife, Scotland. Judith’s Celtic ancestry is reflected in the three elements of the Wallace symbol – the Celtic cross, thistle and the Celtic knot pattern.

    JThis Riesling was sourced from the McKay’s vineyard in Watervale. South or east-facing slopes are best suited for Riesling as they are shielded from the hot northerly winds that can occur during summer and also receive the cooler morning sun. The soil in the McKay’s vineyard is clay over limestone, which is free draining. The Clare valley climate is continental with a high diurnal temperature difference with clear skies. The cool nights lead to the preservation of crisp natural acidity and delicate flavours.

    The wine displays minerality on the nose, with characters of crunchy green apples and wet slate. A firm acid line drives through the palate with lime, citrus and a mineral finish. It has a lush silky flow and a calming finish.

    Tahbilk Shiraz is sourced from nearly 30 hectares of vines planted at various times from the 1930s through the early 2000s. Made using traditional Tahbilk techniques; fermentation takes place in 150 + year old open vats, before maturation in French and American oak for 18 months before bottling. The resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared. Varietally expressive with ample plum and blackberry fruits, there is warm earth and spicy savouriness that immediately appeals with a backbone of fine, opulent tannins and a rich, persistent finish.

    Tahbilk’s vineyards are grouped along the banks of the Goulburn River, a branch of it which flows through the estate. The vines are grown at around 134 metres elevation of gently undulating and flat terrain. The soils are sandy loam with ferric oxide content, which vary from very fine sand near the anabranch to denser loams on the plains. Tahbilk has Shiraz vineyards dating back from the 1860s to the 1990s. The oldest surviving block is the ‘1860 block’; planted on its own roots in sandy soils, which has made it impossible for phylloxera to colonise the vine roots.

    The 2021 Laissez-Faire Riesling from Larry Cherubino is a truly delicious example of Riesling wine. This is a completely dry white wine with spectacular intensity and a bouquet reminiscent of red apple and white peach with minerally notes in the background.  White stone fruit flavours are persistent on the pallet, there is a subtle texture with tight knot acidity lingering in the background which provides length and persistence.

    Laissez-Faire means “let it be” and this reflects the hands-off approach that winemaker Larry Cherubino employs.  He has learnt from organics, bio-dynamics and natural wine practices, but is not dictated by one school of thought. Larrys says ‘ We don’t subscribe to dogma. You could call them natural wines, but we like to think of them as post-natural wines.  We believe in healthy and sustainable vineyard practices and winemaking transparency with as little as possible between the vine and finished wine

    In the Laissez-Faire wines, there’s no added tannin, or acid, or animal fining products. There is zero sulfur used throughout the winemaking and only a minimal amount at bottling. They are using alternate varieties and blends to make naturally balanced wines.   From vine to bottle, the wine takes its course, hands-free.  The wines are also vegan friendly.

    A generous blend of equal parts Negroamaro & Primitivo, the powerhouse grapes of Puglia.  This beauty is a fleshy wine with dark berried fruit layered with chocolate and hints of spice. Smooth with great purity of fruit through to a long sustained finish. Quite delicious.

    The vineyard is located in Salento, Puglia, where the vines are grown at an altitude of approximately 100 metres above sea level. The temperatures are relatively high over the summer, which encourages the berries to ripen evenly. The soil is predominantly clay with some rocks, which help drainage. The vines are old, gnarly bush vines that are over 50 years old and are planted at a density of 4,500 vines per hectare. The Primitivo is grown in the highly reputed area of Manduria, locally regarded as the best in Puglia. The harvest takes place in September when the grapes are slightly overripe.

    Simpsons Wine Estate is situated in the Elham Valley; an unspoilt seam in the North Downs of Kent where the contours of the land, the climate and the soil are excellent for viticulture. The intensely lime-rich chalk soil forms part of the same chalk ridge that stretches from southern England through Champagne and on to Burgundy. The grapes come from the Roman Road vineyard, named after the route the Romans first marched when invading England in AD 43.  They are grown on south-facing slopes, ensuring heat accumulation in the day and cold air drainage at night. The vineyard is less than eight miles from the coast, providing a crucial maritime influence insulating the fruit against intense temperature variations.

    Domaine Gauby is located close to the small town of Calce in the Roussillon. Now run by Gérard Gauby, his wife Ghislaine and their son Lionel, who is responsible for the winemaking, the domaine has gained a reputation for making wines of exemplary freshness in a hot climate.

    This 2020 `Calcinaires` Blanc has a fresh nose with delicate aromas of white flowers and notes of peach and quince. The palate is expressive with layers of citrus and stone fruit. A bright acidity is underpinned by a long mineral finish.

    This blend of 40% Grenache Blanc, 30% Chardonnay, 20% Macabeu, and 10% Vermentino is sourced from a mixture of old and young vines planted on clay loam and limestone. The Chardonnay vines are average 45 years old and the Macabeu 80 years old, which gives the grapes great concentration. The Roussillon has incredibly diverse soils which, combined with the multiple aspects from the rolling hills, has given Gérard Gauby the freedom to experiment and maximise the potential of each grape variety.

    Lismore Estate is based in Greyton within the Overberg region of the Western Cape of South Africa.  It’s here with the Sonderend mountains as a backdrop that winemaker & proprietor Samantha O’Keefe makes her fabulous wines.   ‘ I had a farm in Africa….’  The opening line of Karen Blixen’s classic memoir Out Of Africa comes to mind when you hear Samantha’s amazing story.

    We love barrel-fermented Sauvignon Blanc at Wine Republic and this beauty is made in an “oxidative” style using old 500-litre barrels for 70% of the fermentation and maturation bringing forward richness, intense fruit and complexity. 30% of the wine is fermented and aged in 1500-litre concrete egg tanks to enhance the rich palate texture and minerality. In both the barrels and the eggs, extended less contact adds complexity and a richer, creamy texture which works beautifully with the bright citrus and fresh herb notes and salty minerality from the grape.
