Paringa’s and arguably Australias top Pinot Noir – made from barrels which were selected as clearly superior at the time of blending and bottling. The wine has rich powerful aromas of spice and dark cherry, combined with charry oak, secondary barrel-ferment mocha/coffee characters that will integrate further to become more Burgundian like with bottle age. On the palate the wine has rich ripe fruit, firm fine-grained tannins helping provide excellent texture and length.

2004 Gregor Shiraz, Hobbs
£9500Add to BasketThis outstanding aged Shiraz from Hobbs is made using the Appassimento style and matured for approximately 24 months in French oak.
Appassimento wines are produced through a process of partially rack-drying grapes to increase concentration of both natural grape flavours and sugars. The result is a wine of atypical power, concentration and alcohol content with an ability to benefit from long periods of maturation.
Named in honour of a very fond memory from early in Greg and Allison’s relationship – a skiing instructor who had a hard time pronouncing ‘Gregory’.

2014 Chardonnay ‘Durell Vineyard’, TOR
£9500Add to BasketEd Durell planted the first vines in the rock-strewn, windy hills in 1979. Today, Durell Vineyard spans three AVAs: Sonoma Valley, Sonoma Coast and Carneros. The block TOR sources from lies in the famed Sand Hill section of the vineyard, which overlooks the Sonoma Valley. This 2014 Durell Chardonnay ranks among the best they have ever produced. “This has the classic seamless, almost oily palate weight and texture to it that the best Durells have but with a thread of focus that helps to pull the intensity of the palate together. Dessert Wine, Port & Dessert Wine
2014 Dolce, Far Niente
£9750Add to BasketDolce is Napa’s true Sauternes-style dessert wine. Dolce embraces the pursuit of perfection in the art of late harvest winemaking. Created in 1985 by the partners of Far Niente, Dolce stands as a standard-bearer for this type of wine in America. With a classic blend of late harvest Semillon and Sauvignon Blanc inspired by the Sauternes region, Dolce is the only American winery dedicated to producing a single late harvest wine.
After nearly three years in French oak, this luxurious vintage shows lifted and youthful aromas of orange zest, vanilla bean and butterscotch with subtle notes of minerality and oak-derived spices. The entry is juicy, and Dolce’s signature texture is lively and enduring on the palate leading to a mouthwatering finish. Flavours of orange, pear and dried apricot mingle together with rich caramel notes and hints of minerals that make this vintage a delicious expression of the season’s exceptional ripeness.
Dolce’s 20 acres of vineyard are located in Coombsville, east of the city of Napa, and are situated at the base of the Vaca Mountains, which define the eastern border of the valley. The volcanic soil is loose and well-drained, and the west-facing vineyard is protected from the prevailing winds so that the damp, morning fog of autumn (a very important factor in the development of Botrytis cinerea) hangs longer amongst the vines, often until midday. A combination of high humidity followed by drying conditions encourages, but does not guarantee, the growth of Botrytis. As it develops, its coverage is seemingly random with individual berries succumbing to Botrytis at different rates, if at all.

2016 Estate Pinot Noir, Magnum, Paringa
Original price was: £17500.£9999Current price is: £9999. 43% savingAdd to BasketA magnificent aged magnum of Pinot Noir from an Iconic cool climate Estate in the Mornington Peninsula.
The Paringa team is confident the 2016 reds will be regarded amongst the Paringa greats. A hot weekend, then a week of solid rains in early March was followed by somewhat of an Indian summer. Pinot Noir yields in 2016 were down 20 – 30%, but resulted in great concentrated flavour & excellent overall quality. In the winery berries were de-stemmed (100%) and fermented in two-tonne open fermenters. Maturation took place over 11 months on lees in French Oak barrels (50% new). This wine has complex lifted aromas of red fruit / dark cherries supported by spicy savoury oak. The palate has attractive spicy dark cherry flavours, fine grained tannins that combine to produce a lovely textural mouthful. The poise & balance of this wine make it one of the best Paringa Pinots made in recent time.
The vineyard is set in the classic cool climate subregion of Red Hill at an altitude of 146 metres above sea level. The Pinot Noir vines are aged between 20 and 30 years; six clones are planted each with subtle characteristics which impart complexity to the resulting wine. The soil is a deep red volcanic clay that allows dry farming, without irrigation. Founder, Lindsay McCall, still tends to the vineyard characterised by its distinctive Lyre or ‘U’ trellis system which sits on an elaborate steel frame assembly.
