  The Paringa Chardonnay is the estates top chardonnay wine and a single vineyard wine.

  The bouquet has a complex floral lift of citrus and stone fruit, with some delicate lees aromas. Cool climate white fleshy stone fruits, citrus notes and savoury nutty oak flavours characterise the palate. This Chardonnay has a round, textured palate harmoniously balanced by a fine natural acidity that leads to a long, persistent finish.

  The name ‘The Paringa’ denotes the single-vineyard origin of this wine. Lindsay McCall planted the first vines on the Paringa Estate vineyard in 1985, with ten acres being under vine by 1990. From this site fruit of distinction is born from a combination of red volcanic (Ferrasol) soil, a north-facing aspect and altitude of 146m on Paringa Road, Red Hill South. In creating this wine viticulture and winemaking practices are approached with the intent of preserving a pure expression of the site from the soil through to bottle.

  2020 M3 Chardonnay, Shaw & Smith – Magnum

  A Magnum of the iconic M3 Chardonnay from a high quality, low yielding vintage.  This wine opens with intense aromas of white flowers, nectarine and citrus. Aiming for elegance, restraint and the ability to age, the acidity is bright and there is generosity of flavour.

  Fruit was predominantly sourced from the Shaw + Smith vineyard at Lenswood, which was planted in 1999 and purchased by Martin and Michael in 2012. Undulating with east and west-facing aspects at 455 – 500 metres above sea level, the soils are brown loams over clay with broken shale on the ridges. Low yields were achieved by aggressive pruning and pre-harvest bunch thinning. All fruit was hand-picked to avoid any fruit damage.

  Charlie Melton uses the traditional Australian technique for their sparkling red, as pioneered by Seppelts at Great Western. The base wine is aged for around two years or so in oak and then tirage bottled and left on lees for up to four years. This gives a complex aromatic of fruit sweetness and classic autolysis character and fine bubble. An important factor is the liquering dosage as this degree of sweetness ensures they will develop for decades.

  This 2002 Sparkling red was disgorged in August 2005 so has had a further 16 years in bottle.   It is an incredible bottle of wine and still has decades to go!   Rich black cherry and plum on the nose with a delightful charry element. It has a fine mousse with powerful red and black fruits. Spicy, dense with a beguiling sweetness. It has a tight, dense core of rich fruit. Off-dry and has fabulous intensity and complexity.  Fabulous!

  2018 Old Paddock Shiraz ‘1921 Vines’, Mount Pleasant

  Mount Pleasant, based in the Hunter Valley, was established in 1921 by the legendary winemaker Maurice O’Shea, from 16.3 hectares of adjoining parcels of land, which he named Mount Pleasant.

  Aromas of ripe black and red berried fruits, supported by savoury and spice elements lead to intense fruits on the palate. Exquisite acidity and a distinguished tannin profile are hallmarks of the 1921 Vines Shiraz.

  The Old Paddock vineyard is an easterly facing site and was the perfect location for Maurice O’Shea’s first Shiraz plantings at Mount Pleasant in 1921. Sheltered from the winds and hot afternoon sun, the fruit from this block is famed for its impeccable structure and intensity. The vineyard is cultivated using sustainable techniques, such as employing mulch to nourish the vines and growing cover crops to increase the biodiversity in the soil.

  Charles Melton Wines has produced premium Barossa red wines since 1984. Charlie and a small band of Barossa winemakers turned their winemaking efforts to what was then considered a couple of unfashionable varieties: Shiraz and Grenache. These wines were initially styled on those from the Rhône but are now considered leading examples of the varieties in their own right. The wines have always attracted national and international recognition, and an enduring commitment to dry-farmed vineyards and careful crafting of the wine will ensure that this continues.

  This phenomenal wine was made from dry farmed old vine Shiraz, has a very deep colour with a toasty nose – some high-quality oak lifting the bouquet. A hint of sweet plums, strawberries poking through. Good firm tannins but with sufficient middle palate weight to match. The spiciness shows through onto the palate with a food-friendly savouriness being knit together with the traditional Barossa richness and sweet fruit finish.

  The 2002 Shiraz from Standish Vineyard is a remarkable wine with a rich history and a complex profile. The grapes were sourced from 89-year-old vines, which is quite significant as older vines tend to produce fruit with more concentrated flavours. This Shiraz spent 30 months aging in French barriques (barrels), specifically ones that were 3-5 years old. This aging process contributes to the complexity and depth of the wine’s flavour. It has a very deep garnet colour, indicating its maturity and concentration.   2016 Mount Edelstone Shiraz, Henschke

  The Mount Edelstone vineyard, situated in the Eden Valley, was planted in 1912 by Ronald Angas, a descendant of George Fife Angas, who founded South Australia. Unusual for its time, it was planted solely to shiraz. The ancient 500-million-year-old soils on the vineyard are deep red-brown clay-loam to clay, resulting in low yields from the nearly 100-year-old dry-grown ungrafted Centenarian vines. First bottled as a single-vineyard wine in 1952, it became recognised as one of Australia’s greatest Shiraz wines.

  2016 is the 64th release of Mount Edelstone.  In the glass, it is deep crimson in colour with violet hues. Fragrant, spicy aromas of black pepper, sage, bay leaf and star anise are interwoven with vibrant plum, blackberry and blueberry, and gentle notes of tarragon and cedar. The palate is complex and textured with rich and concentrated flavours of mulberry, blackberry and plum, layered with sage, black pepper and star anise. The finish is beautifully balanced, with long, velvety tannins and excellent depth.

  Amon-Ra Shiraz is an iconic wine that epitomises Ben Glaetzer’s passion to create wines that are full flavoured, multi layered and intense but still elegant, stylish and finely balanced.

  Made from exceptional old vine fruit was sourced from the famed Ebenezer sub district at the northern tip of the Barossa Valley. These old vines are between 100-110 years old.

  in the glass this wine has a perfumed nose, with layers of violet, spice, liquorice and vanilla. The palate flavours are very pronounced, with a very spicy back palate. Mouthfilling flavours of black pepper, blackberry, spice, and plum overlaid with cedar. The tannins are fine, yet slightly chalky but perfectly balanced.   In Egyptian mythology, Amon-Ra is considered to be the king of all gods. The temple of Amon-Ra was believed to be the first temple to ever plant a monoculture vineyard to produce wine for the citizens of the temple.

  The eye on front of the label is the all-seeing eye of Horus or wedjat (“whole one”) – a powerful Egyptian symbol of protection. It is represented as a figure with six parts, corresponding to what Egyptians regarded as the six senses; touch, taste, hearing, sight, smell and thought.

  2012 Armagh Shiraz, Jim Barry

  This is one of the worlds greatest wines.

  The iconic ‘Armagh’ vineyard was named by the original Irish settlers who arrived in 1849 and called the lush, rolling hills after their homeland. In 1968, the vineyard was purchased by Jim Barry who planted it with Shiraz. Today these low-yielding vines produce less 27 hectolitres per hectare. The soil is sandy gravel and receives an average rainfall of 600 millimetres per year. The vineyard lies on a northwest-facing slope which acts as a natural sun trap, ensuring the fruit is always fully ripened at harvest time. The Clare Valley climate is continental with a high diurnal temperature difference, producing Shiraz with evenly ripened tannins and flavour.

  ‘Deep garnet-purple colored, the 2012 Shiraz The Armagh offers a gorgeous perfume of baking spices, violets, Sichuan pepper and fragrant earth. More earthy and savory in the mouth than on the nose, the palate is superbly structured and taut—built for the long-haul—with a long, complex finish.
