  2012 Fiano, Chalmers

  The high acid, bold flavoured Campanian grape Fiano has really found it’s second home in Australia, especially in Heathcote where it regularly outshines the red grapes on the same site in a traditional red-wine growing region. Chalmers have a museum of Fiano wines dating back over a decade with even the older wines still singing. The 2012 Chalmers Fiano is no exception, melding delicate stone fruits and almond blossom with savoury lees contact characters and minerality, displaying texture and power in the mouth whilst retaining a fine, fresh finish.

  Chalmers Fiano is whole bunch pressed and fermented on solids, 10% in old French oak barriques, 90% in stainless steel tanks without yeast addition. The temperature of fermentation is limited to 15 degrees. After fermentation is finished the wine rests on lees in tank for 6 – 9 months before being bottled.  The Fiano is then aged in bottle for a further 24 months before release allowing the wine to develop in richness and texture.

  The indigenous variety of Thrapshathiri (pronounced Thrap-sah-THEE-ree) is grown in the Dafnes region, in vineyards located at an altitude of 400 to 500 metres above sea level. At this elevation, the cool Aegean summer breezes refresh the vines during the summer, when temperatures can reach 35°C. The cooler nights can drop to 15°C and this diurnal temperature difference retains natural acidity in the grapes, balancing this rich and intensely aromatic variety.

  Winemaker David Depuydt makes Chablis as it should be; mineral, fresh and light but with interest and texture. Think flavours of lemon, pea shoot and green apple, it’s got racy acidity but not a hint of bitterness.   The area of Lussac is an up and coming satellite appellation of the renowned Saint Emilion region on the the Right Bank of Bordeaux. There is no doubt that one of Lussac’s most prized properties is Château Lucas, owned by the Vauthier family of Château Ausone fame. From just 18 hectares of vines, three cuvée are produced. The top wine, aptly called Château Lucas, is produced from a 12-hectare vineyard, comprising equal parts Merlot and Cabernet Franc. While so much of the Right Bank focuses on Merlot, the high percentage of Cabernet Franc brings a polished lift to the cuvée, vintage in and vintage out.

  In the glass it opens with aromatics of raspberry and blackcurrant interlaced with plum and vanilla notes.  The palate is round and balanced with flavours of earthy spices, tobacco and blackcurrants that lead into a sustained finish.

  Fruit for the Province Sauvignon was grown in vineyards located in the Awatere Valley sub-region of Marlborough. It was harvested in cool evening conditions to preserve freshness and vitality and lightly pressed with minimal skin contact to let the pure juice do the talking.

  2017 Shiraz ‘Watervale Single Vineyard’, Jim Barry

  This 2017 Shiraz comes from a single-vineyard sourced from the Florita vineyard in Watervale.  The Shiraz block is planted on a gentle northwest facing slope that takes full advantage of Clare Valley climate.

  It is an opulent wine with expressive aromas of rich, bright red fruits that are supported by classic Clare Valley spice. Beautifully structured with fine savoury tannins and terrific length of vibrant fruit on the palate.  This is not your typical Clare Valley Shiraz!   The opulent nature of the wine could be due to winemaking that saw one-third of the grapes being co-fermented with 15% of whole bunch fruit to impart complexity and an aromatic lift to the wine.   The wine then went through malolactic fermentation (a process where tart malic acid in wine converts to softer, creamier lactic acid) before being transferred to oak barrels for 12 months of ageing.

  A terrific mouthful of wine!

  This knockout wild Ferment Sauvignon Blanc from Harry Hartman Wines is made from fruit picked in the premium regions of Elgin and Bot River.  Elgin fruit has a higher level of acidity adding to the more citrus notes and making the wine more linear. Botrivier fruit is more rounded, with bigger tropical notes.

  In the glass, the wine paints a picture of a basket filled with freshly picked kiwi and yellow plums. The fruit is clean and welcoming, backed with a perpetual herbaceous note that blows off as the wine evolves in your glass, leaving hints of spice and a creamy note of old-fashioned lemon candy.   This Sauvignon Blanc from Leyda Valley has enticing aromas of citrus fruit, lime and mandarin that are underpinned by spicy notes of blackcurrant leaf, green chilli pepper and chalk. This is a vibrant and juicy Sauvignon Blanc with refreshing, zesty acidity and delicate mineral notes.

  The grapes were sourced from small plots within selected vineyards in the Leyda Valley, 14 kilometres from the Pacific Ocean, where the vines are cooled by the South Pacific breezes and the morning coastal summer fog. Located to the west of the coastal mountain range, the Leyda Valley’s finely textured soils are developed from granite rock on the coastal batholith formed 200 million years ago during the Jurassic period.

  Ribolla Gialla is an ancient white variety from northern Italy that can be traced back to the 13th century and to the province of the Colli Orientali del Friuli.

  The Castello di Buttrio vineyard is situated on the hillside slopes at 142 metres above sea level, which ensures excellent air circulation to keep the vines healthy. The Ribolla Gialla vines range from 10 to 60 years in age and are planted in soils that are made up of layers of marl and sandstone of Eocene origin, known locally as ‘ponca’ in Friulian, which contains marine fossils originating from the Adriatic Sea. This soil produces textured and concentrated wines which are balanced by cutting acidity, thanks to the soil’s high pH and cool temperature.
