    This aromatic Cabernet shows notes of cassis, tarragon, graphite and cedar on the nose. These continue on the palate which has a silky texture and great structure from the fine tannins. The richness and power of the wine are balanced by freshness and finesse. The finish is dry with lingering blackcurrant and blueberry flavours.

    Grapes for this wine is a blend of parcels from the cooler parts of Stellenbosch. One parcel is from 39-year-old, dry-farmed bush vine Cabernet Sauvignon, planted on deep alluvial soils of Firgrove. A further two parcels are planted on the slopes of the Helderberg Mountain, while the final parcel is sourced from the Polkadraai Hills, where the soils are decomposed granite.

The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees which balance the hot, arid summers. The soils are made up of alluvial marls of the Roussillon plain, along with black schist; the latter imparts great aromatic complexity to the wines, characterised by freshness and notes of the garrigue. The vineyard is certified organic.

    Mont de Milieu is a 1er Cru vineyard site located on the eastern banks of the Serein River and produces age-worthy wines from this exceptional terroir. The vines are planted in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. Domaine Goulley’s old Chardonnay vines were planted in 1968 and were converted to organic status in 2005, since then it has been cultivated without the use of chemical treatments.

    The vineyard has a south to southwestern exposure and sits at 150 to 190 metres elevation which encourages good diurnal temperature differences, encouraging the grapes to accumulate good fruit concentration while retaining refreshing natural acidity from the cooler nights.

The old vine depth of fruit provides a complexity not seen in most Chardonnay – there is always more to find in the wine without it being overworked or over-blown. This is a beautiful wine with depth of flavour and texture that will stand up in a fine dining situation.

    An irresistible rosé Champagne combining great precision, freshness and fullness with charming aromas of wild strawberries, red and black currants, along with beautiful hints of vanilla and cinnamon spice.

    This rosé Champagne was produced using the solera method. Palmer & Co is one of the rare champagne houses to have adapted this well-known technique, often used for Spanish wines, for the creation of its champagnes. Each year, Palmer & Co adds red wines from the new harvest, which have been barrel-aged and typically amounts to 6-7%, to compensate for the wine drawn off. This perpetual reserve was started 40 years ago and is kept in stainless steel tanks. It forms an extraordinary library expressing a unique combination of red fruit and spice aromas and flavours. This rosé Champagne was then bottle-aged for two to three years on the lees, in the 18-metre- deep chalk cellars which imbues the wine with incredible complexity.

    Serge Laloue has always been one of our favourite winemakers in the Loire, making incredible Sancerre. This we think is their finest Cuvee, crafted by Franck Laloue the Sancerre Silex has intense aromas of smoky graphite with mineral notes of oyster shell that are complemented by zesty orange peel and Mirabelle plum. This fresh, supple cuvée delivers concentrated citrus flavours through to a bright and uplifting mineral finish.

    The grapes come from a three-hectare estate vineyard, where the vines have an average age of 40 years, producing low yields of concentrated fruit. The vines face a south-easterly orientation, maximising exposure to the sun to assist ripening of the berries. The soils are ‘silex’, a flinty clay that produces elegant wines with distinctive graphite and mineral characters. The vineyard is currently in conversion to organic status, a natural progression for the Laloue family as the farming methods used over many years have followed these principles. Vineyard management techniques include ploughing the soil instead of using herbicides, growing cover crops between the rows of vines and sexual confusion of predators, to maintain the health of the vines and the biodiversity of the environment.

    The Estate series from Paringa is a step up from the Peninsula wines and represent the unique Paringa “style” upon which their reputation has been built.   Expressive aromas of lemon sherbet, white peach, and hints of struck match, lead onto a racy palate. Vibrant fruit flavours are framed with crisp acidity which gives the wine a long, linear finish.

    The fruit for this wine came from the ‘Estate’ vineyard, and the Callanan’s Road vineyard. The fruit comes from low-yielding vines, some of which are over 30 years old. They are grown in the typical red volcanic, iron-rich soil known as Ferrasol. The vines are sustainably cultivated, respecting the balance of the soil and the biodiversity of the environment.

Instead, the theme is carried by apricot and sweet pear with a bite of Golden Delicious apple in the finish.

    This is probably the best Assyrtiko made in Greece and therefore anywhere!  A highly complex, aromatic nose and funky nose, with citrus notes combining with floral hints from the acacia wood, vanilla, toasty oak and a touch of smoke. The layers of wild ferment envelop this precise and dry wine which has a mineral and salty complexity to the tangy finish. This is a truly unique wine.

    The Assyrtiko vineyard is located in Santorini and the terroir is recognised worldwide for its tremendous historical roots, as the vineyards in this area date back 3,000 years. The low-yielding, 80-year-old, self rooted vines are grown in soils that are poor in organic matter. The high sand content has ensured they have never been affected by phylloxera. The soils are also volcanic: porous with a high mineral content, which imparts the mineral quality to the wine. The long sunshine hours, lack of rainfall, sea mists and strong summer winds all contribute to the unique microclimate. The surrounding Aegean Sea acts as a “climatic buffer” that softens the climate, so the extreme conditions are reduced. The vines are trained on traditional basket-shaped systems called “kouloura”.
