2023 Negroamaro Rosato, Cantele
£1595Add to BasketThe village folk still call it Niuru Maru: Negroamaro, meaning bitter black (red).
In another era, Negroamaro was grown solely to ship to the north of Italy where the colder climate made it challenging to obtain the desired color and alcohol levels in the wines they produced. But in recent decades, more and more Salento wineries have looked to the variety as one of the most noble expressions of Pugliese viticulture.
FCantele’s rosé wines are made from a selection of top Negroamaro grapes that are used to make their flagship wines. Winemaker Gianni Cantele, to achieve their deep rose hue and their rich aroma and flavour, employs the Italian salasso method (known in English and French as saignée): as the Negroamaro grapes are macerating on their skins to extract the variety’s naturally dark colour, he racks off — in other words, he “bleeds” off (hence the name) — some of the must to another tank. After vinification, the resulting wine is aged and bottled as the Rosato di Negroamaro (rosé from Negroamaro).
This is an ideal wine for appetizers, pizza, fish and seafood, and simple first and second courses — especially vegetable-based recipes.

2021 Appassimento Gold Release, Ca Vittoria
£1595Add to BasketThe Rosso IGT Puglia Vino Appassimento Gold Release from Ca’Vittoria is a 60% Negroamaro, 25% Merlot, 15% Primitivo blend of grapes grown and harvested in the Salento area of Puglia, with picking occurring as late as October. This gives a high level of sugar and high alcohol, required for the Appassimento method. Ripe grapes mature on the vine for about 15 days, during which period 50% of their weight and moisture is lost. After a rigorous hand harvest, the grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavours and the characteristic ruby red colour. The wine is then left in oak for around 3-4 months. The resulting wine is concentrated and moreish, with characteristic notes of plums and raisins.

You could call them natural wines, but we like to think of them as post-natural wines. We believe in healthy and sustainable vineyard practices and winemaking transparency with as little as possible between the vine and finished wine‘
In the Laissez-Faire wines, there’s no added tannin, or acid, or animal fining products. There is zero sulfur used throughout the winemaking and only a minimal amount at bottling. 2017 Blanc, Olifantsberg
£1650Add to BasketThe vision was to produce a great white Rhône style blend from the Breedekloof region. This beautifully layered wine with opulent fruit flavours of white peach, ripe apricot and delicate citrus notes complemented by hints of floral and dried green herbs. The palate is rich, textured and elegant.
The vineyard is located on the fertile slopes of the Olifantsberg Mountain Range at altitudes from 250 metres to 450 metres above sea level. It endures harsh conditions, with wide diurnal temperature swings and strong winds. During the winter the mountain peaks are snow-covered, keeping the vines dormant for longer. Cold winters, coupled with the summer winds, ensures the slow ripening of the grapes and helps to maintain healthy vines, contributing freshness and elegance to the wines. The vineyards are farmed using sustainable practices, helping to maintain the biodiversity within the vineyard and soils. The Roussanne and Grenache Blanc are young plantings on the estate and are grown on shale soils, the Chenin Blanc is grown on sandstone/shale soils, which lends freshness to the wine. The training is ‘sur eschalas’ in order to maximise the number of vines per hectare and to protect them from strong winds.
