The shape of the vessel causes the yeast to be in a constant state of flux, giving the wine richness and complexity, without any wood flavour to mask the fruit character. Concentrated baked yellow apple, peach, dried apricots and graphite with hints of almond and spices on the nose. In the mouth, it is full-bodied with a complex depth of flavour. Highly layered with a persistent, creamy, spiced apricot finish. The bottles are sealed with vegan wax.

    The name ‘Nebbiolo’ comes from one of two schools of thought: some believe as the harvest of Nebbiolo usually occurs in October, when foggy weather is common, it takes the name from ‘nebbia’ meaning ‘fog’; however, others believe the name is derived from the presence of ‘pruina’, a substance which gives the appearance of a foggy haze on the berry’s skin. The Nebbiolo vines are grown in the northern Italian region of Piedmont, where the climate is continental and is tempered by the Tanaro River and its tributaries. Grown in marl clay and sand soils, the late-ripening variety is usually harvested in early October.

    Avaton is a luscious blend of three Greek indigenous varietals, where ripe dark fruits combine with notes of raisin, coffee, cacao and a hint of spice. Perfumed and polished, this smooth, medium-bodied wine delivers sweet and sour notes of black plum, with depth and spice leading to a dry finish.  The grapes (Limnio, Mavrotragano and Mavroudi) are fermented in open oak casks, then aged 15 months in oak barrels.

    At Ktima Gerovassiliou, the single, private 74-hectare vineyard is cultivated with great care and enthusiasm, which leads to constant research and experimentation with Greek and international varieties. New technological advances blend well with tradition throughout the vine growing and vinification processes to produce high-quality wines that carry all the distinct characteristics of the terroir of Epanomi. The climate in the region of Epanomi is Mediterranean with mild winters and hot summers, tempered by sea breezes. The vineyard is surrounded on three sides by the sea, which is three kilometres away, while its west side faces the Thermaic Gulf, Mount Olympus and the beaches of Pieria. The vines are grown in soils which are mainly sandy with a few clayey substrates and calcareous rocks. It is rich in sea fossils, as the surrounding hilly area was formed by sea deposits.

    Terres Noires is a single vineyard on the south side of the landmark rock of Solutré, where limestone soils mix with black decomposed rock. One-third of this Chardonnay is matured in oak barrels for four months and it is this careful use of oak that is key to the style. It has a lovely forward and expressive peachy fruit style. A medium oaked chardonnay with lemon and butter and a touch of honeysuckle on the nose. Soft and creamy with plenty of body and texture.

    This vineyard site has been the foundation for some of Saint Clair’s finest wines. This is the vineyard where Saint Clair Family Estate first discovered the fruit to make their flagship Saint Clair Wairau Reserve Sauvignon Blanc. The fruit is sourced from a single vineyard in the lower Wairau Valley. The Block One site was previously part of the Wairau flood plain and is renowned for its deep, highly fertile, free-draining soils, which have been built up over time and help to produce the intensity of flavour in the resulting wine. The vineyard has a flat profile and is situated approximately three metres above sea level. It is now protected from flooding by a stopbank. Located in a slightly cooler site than the majority of the Marlborough Valley, the vines have a slower annual ripening period. The fruit is carefully monitored during the ripening stage and is harvested during the cooler evenings, at maximum flavour maturity and physiological ripeness.

    The grapes are grown in the six-hectare vineyard of Tenuta la Court in the commune of Castelnuovo Calcea. Castelnuovo Calcea is one of the 18 designated communes within the appellation of Nizza DOCG. Originally a subzone of the Barbera d’Asti DOCG, Nizza became a separate DOCG in 2014. The Guyot trained vines are planted at a density of 5,000 vines per hectare and are grown on southeast to southwest facing slope at an elevation of 230 to 280 metres above sea level. The soils are known as ‘Astiane Sands’ and consist of calcareous clay marl of sedimentary marine origin, with a good presence of lime and sand and are rich in microelements, in particular magnesium. The vines are very low yielding with excess bunches thinned at the end of the summer in order to concentrate the flavours in the remaining grapes.

    The Hautes Côte de Nuits vineyards run parallel to those of the Côte de Nuits but are situated at a higher altitude. This wine comes from 1.05ha of organically certified Chardonnay vines. They are 35 years old on average and are planted at a density of 3,500 vines per hectare. The vineyard is east-facing and planted on limestone soil, which gives the resulting wine great freshness and fine minerality.

The lack of excessive heat in the Gimblett Gravels is also a critical factor as it means the aromatic characters in the fruit, which contribute to the floral notes, are retained. The soils are composed of small to medium-sized greywacke stones interspersed with layers of silt and sand down to a depth of at least 40 metres. The stones on the surface absorb sunlight and heat during the day and then radiate heat at night, enhancing the vine’s ripening capacity. The stony soil structure allows for very rapid drainage after rainfall events; the low water-holding ability the vine’s growth to be controlled. The soils in this locality produce rich, ripe, yet elegantly structured red wines with a distinctive mineral, hot stone and fine dusty character, affectionately known as ‘Gimblett Dust’.
