Château de Valois is a traditional right-bank Bordeaux from a small property with a growing reputation. Beautifully traditional they blend Merlot and Cabernet Franc grown in iron-rich soils just a stone’s throw from Chateau Figeac and Chateau Cheval Blanc.
The 2016 nose is bursting with blackberries, exotic spice and hints of smoky oak and cedar. On the palate, the texture is rich and generous, with soft tannins. The finish has a good freshness and is full of lingering ripe fruit.
This delicious sweet style champagne has light aromas of meringue and praline that are swirled in delicate notes of violet and stewed fruits, through to a beautifully balanced palate with sustained freshness and fine, sweet flavours. Notes of candied citrus and candied strawberry are complemented by a warm touch of white pepper in this light Champagne which develops on the palate over time.
An assemblage of over 100 Crus, this cuvée reveals a broad array of aromas reflecting the diverse terroirs of the Champagne region. The composition is completed with 35% reserve wines in order to preserve the Collet style year after year. The blend comprises 50% Pinot Meunier from the villages of the Marne Valley and the Ardre Valley, which brings tonicity, richness and tension to the wine. The Crus of the Aisne make a tender and round wine and punctuate the assemblage with exotic fruit notes. 30% Chardonnay from the Sézannais region adds enjoyment and harmony and the Crus of southern Epernay contribute tonic citrus notes. 20% Pinot Noir from the Côte des Bar contributes structure and tension.
The 2018 Amarone della Valpolicella DOCG by Musella is a masterful expression of Valpolicella’s rich winemaking heritage, crafted with biodynamic precision and a deep respect for tradition. Sourced from estate vineyards nestled in the hills northeast of Verona, this wine is a blend of 50% Corvinone, 45% Corvina, 5% Rondinella, and 5% Oseleta.
The grapes undergo the traditional Appassimento process, where they are dried in well-ventilated rooms, losing at least 40% of their original weight. This concentrates their sugars, aromatic compounds, and noble tannins. In January, the grapes are gently pressed, and fermentation begins at low winter temperatures (13–17°C). The wine is then aged for 24 months in 3,500 to 5,000-litre oak barrels, followed by 12 months in concrete tanks, allowing it to develop depth and complexity.
In the glass, this Amarone reveals a deep ruby hue. The nose is rich with aromas of sweet cherries, dried fruits, spices, and hints of bitter chocolate and tobacco. On the palate, it is full-bodied and opulent, offering a harmonious balance of concentrated fruit flavours and a pleasantly tangy finish. The wine’s structure is supported by its 15.6% alcohol content, providing a robust yet refined experience.

Simpsons Wine Estate is situated in the Elham Valley; an unspoilt seam in the North Downs of Kent where the contours of the land, the climate and the soil are excellent for viticulture. The intensely lime-rich chalk soil forms part of the same chalk ridge that stretches from southern England through Champagne and on to Burgundy. The grapes come from the Roman Road vineyard, named after the route the Romans first marched when invading England in AD 43. They are grown on south-facing slopes, ensuring heat accumulation in the day and cold air drainage at night. The vineyard is less than eight miles from the coast, providing a crucial maritime influence insulating the fruit against intense temperature variations.

Crafted in honour of Elderton co-founder Neil Ashmead, the 2022 Neil Ashmead Grand Tourer Shiraz is a tribute to the passion and pioneering spirit that helped shape the Barossa Valley into one of Australia’s premier wine regions. This wine is a bold yet elegant expression of Shiraz, drawn from two distinctive vineyard sites: the historic Nuriootpa vineyard, planted in 1954, and the Greenock vineyard, established in 1980.

This, their superb Reserva made from 100% tempranillo, is aged for 24 months in oak barrels before bottling. It has a whole array of aromas from black cherry and raspberry to vanilla and sweet oak spice. Rich and smooth on the palate it has abundant silky tannins and plenty of ripe fruit that mingle wonderfully with the sweet spice flavours picked up from the time spent in American oak barrels. While full bodied and well structured it also has a good freshness from the well judged acidity.
This is a must-have glass for any serious wine drinker and without doubt our favourite glass here at Wine Republic. It really excels with expressive, perfumed wines such as Pinot Noir and Nebbiolo but we also think it is a brilliant glass for Chardonnay and Viognier.

In the glass is has a rich deep red colour with violet highlights, typical of young wines from great vintages. An intense nose blends notes of cherry and blackberry with subtle hints of chocolate. It is ample and unctuous in the mouth, with a distinct fleshy character. Understated tannins prolong the tasting experience while lending softness to the wine. Talbott Vineyards is defined by its iconic Sleepy Hollow Vineyard, where the conditions are ideal for exceptional, cool-climate Chardonnay. Located in the northern area of the Santa Lucia Highlands AVA in Monterey County, it has been designated one of California’s Grand Cru vineyards by Wine Enthusiast in 2016, for its ability to produce exceptional wines year after year. The vines were first planted in 1972 at an elevation of 168 metres and cover 228 hectares. Due to the proximity of the Pacific Ocean and the east-to-northeasterly exposure, cooling fog and frequent ocean breezes temper the warm sunshine, giving Sleepy Hollow one of the longest growing seasons in California and allowing each grape to develop concentrated flavours.
