    This naturally vinified wine is golden in colour with a complex bouquet of smoky, spicy and herbal aromas enveloping the fruit. Grapefruit flavours are accompanied by a hint of tomato plant on the firm, dry and textured palate. Long and mineral finish with a touch of salinity.

    Naturally vinified without any additions or must corrections. The fruit was carefully selected, vinifying only the highest quality berries. The grapes were fermented with natural indigenous yeasts in traditional clay amphora pots known as ‘Tahla’. The process took place without any intervention, including temperature control. Following fermentation the wine was aged for five months with skin contact which imparted complex aromatics to the wine. This may create a natural deposit in the bottle.

    A beautifully fresh wine with tropical notes and a core of minerality shining through the spicy flavour, long and saline on the finish.

    Made from a blend of Carricante and Grecanico. Carricante is an ancient white wine grape variety from eastern Sicily. It is thought to have been growing on the volcanic slopes of Mt Etna for at least a thousand years. Grecanico is one of the great varieties of white wine grape native to Italy, it is more commonly called Gargenega.

    Occhi di Ciumi grapes are grown in a valley between the volcano and the Nebrodi Mountains, at approximately 620 metres above sea level. At this elevation, warm days and cool nights encourage a long ripening period concentrating the flavours in the grapes while retaining balancing acidity. The vines are grown in ash coloured volcanic soils, which are rich in minerals and fossils. The soil is permeable to air and water and is rich in pumice stone and microelements, which allow the plants to produce a complex aromatic profile. The 10 to 50 year old vines are cultivated following organic and biodynamic principles and the vineyard is in conversion to organic status.

    The undisputed champions of Frascati wine, the Santarelli family is almost single- handedly responsible for transforming Frascati into a Titan of the volcanic wine category. Their Frascati DOCG is a deserved winner of the Tre Bicchierri award and is truly one of Italy’s great white wines.

    This is an intense and aromatic Frascati, with notes of juicy exotic fruits complemented by floral top notes. Refreshing yet textured with fruity flavours of apple and pear layered with hints of minerality, finishing on a delicious savoury note.

    Made from a blend of local grape varieties, which flourish on the volcanic hills south of Rome. The vineyards were completely replanted during 1990 to 1992, at a density of 5,500 vines per hectare to limit vigour, thus concentrating the flavours in the grapes.  The vines are planted at an elevation of 300 metres above sea level and are orientated towards the south-east to maximise sunlight exposure. The volcanic soils are layered with granular tuffs, which are rich in mineral elements producing elegant and fresh wines with a distinctive character.

    The 2019 Block W Chenin Blanc is mineral in profile, tightly wound in its youth, slowly maturing overtime to release delicate floral nuances, trimmed with a finely poised line of acidity. Textured with delicate spice from subtle oak ageing, this is a superlative example of Chenin Blanc with a saline finish.

    The grapes come from the Single Vineyard Block W, which is located in the Rustenhof area of Stellenbosch. The soil is Cambrian Cape granite, a duplex soil with a marked textural contrast between the coarse sandy topsoil and the clay enriched subsoil. The clay subsoil, offers good water retention properties, which help to nourish the vines during the hot summers. The vineyard is situated just over 2.5 miles from the sea and vines are grown at an elevation of 65 to 70 metres. The sea breezes have a cooling influence on the vines, imbuing the grapes with a natural acidity that beautifully balances the ripe, concentrated flavours the grapes reach in this warm, sunny climate.

    The grapes come from the Bottelary Hills ward of Stellenbosch, in the Western Cape. The westerly facing vineyard is located at 300 metres’ elevation and is planted on granite and sandstone soils which offer free-draining properties. The climate is generally hot and dry; however maritime influences from False Bay to the south provide moderating sea-breezes, which help to keep the vineyards healthy and impart balancing freshness to the grapes. Pinotage, South Africa’s signature grape variety, is a crossing between Pinot Noir and Cinsault, (the latter was previously known as Hermitage in South Africa) from which it takes its name.

    Le P’tit Paysan Cabernet Sauvignon offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.

    Cabernet Sauvignon is sourced from two vineyards, a 44-year-old vineyard planted in the calcareous alluvial deposits of the San Benito River and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot from the Paicines AVA and grows in rocky alluvial deposits above the Tres Pinos arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late-ripening Bordeaux varieties to be picked at high acidity and moderate sugars. Fermented whole berry in several lots with endemic yeasts, pressed after approximately 20 days. Aged for 11 months (3% new) French barrels.     A beautiful balancing act of crisp, inviting acidity, pure varietal fruit flavour and character, Querciabella Chianti Classico represents the pinnacle of high-altitude, perfectly exposed Sangiovese fruit.  Its complexity and consistency derive from sourcing the grapes from top sites across the Classico region.

    Each vineyard is cared for on a lot by lot basis to respect the essence of each site. The same focus and precision in the cellar, allow for natural winemaking with minimal intervention, that preserves the purity of the fruit. After about 14 months in fine-grained oak barrels, and regular racking, only the best lots make it to the final blend. Once bottled, the wine rests patiently for a few more months before release. This patient maturation adds a layer of softness and enhances the varietal fruit notes typical of quality Sangiovese.

    Sangiovese practically screams for anything with tomato sauce and the natural pairing with Tuscan regional food is, of course, Pappa al Pomodoro. A heartier option is to pair this full-bodied wine with a dish that can stand up to its great structure and complexity like Spaghetti Bolognese.

The old, low yielding 70-year-old Albariño vines are planted at a density of 1,000 to 2,000 vines per hectare and produce grapes with concentrated flavours. The vineyard is situated on a hillside at an altitude of between 50 to 100 metres above sea level, where it is influenced by cooling sea breezes from the Atlantic. The vineyard is cultivated in the traditional manner and the schistous soils imbue the wine with an intense character and mineral style. The grapes are manually harvested at optimum maturity.

    This 2019 Santenay La Forge from Jean Baptiste Jessiaume has a nose of redcurrant, raspberry, blueberry and violet,  The palate is precise, dense and textured with lovely integrated oak.  The finish is irresistible with a souring cherry acidity that adds life and balance.   Will age for 10-15 years.
